  • Pound cake pieces, for servingAssorted cookies or graham crackers, for dipping
  • 2 cups strawberries, chopped
  • 2 tbsp maple syrup
  • 8 oz cream cheese, softened
  • 1/2 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • zest of 1 lemon
  • 1 tbsp fresh mint, finely chopped
  • 1/4 cup toasted pecans, chopped
  • pound cake pieces, for serving
  • assorted cookies or graham crackers, for dipping

Instructions: 

  • Add the chopped strawberries to a bowl with 2 tbsp maple syrup and stir to combine.
  • Lightly mash some of the mixture with a fork so you have a mix of chunky and jammy strawberries. Do not over mash or the mixture will get watery.

Hi Andy,
I haven’t actually tried this recipe yet but it is very similar to mother one I have made a few times for a strawberry salsa- it didn’t halve the cheesecake -base but I do love the idea so I’ll try it next time. But I’ll serve it with my cinnamon & sugar tortilla chips. I just cost them with with cooking oil spray then sprinkle them with a healthy amount of cinnamon & sugar, cut them up and bake them for about 10 minutes in a medium hot oven. They’re going to be great with this!
