Mix until smooth and store in the fridge!

You can absolutely make cottage cheese cookie dough without protein powder if you like. Simply omit the protein powder and add the same amount of almond flour. This will result in the texture and flavour you are looking for. You may wish to add an extra teaspoon of vanilla extract as the protein powder would add some additional flavour.

What purpose does the almond flour serve? TIA
The almond flour helps give the cookie dough its classic texture—soft, slightly crumbly, and scoopable. It also adds healthy fats and a bit of structure to balance out the moisture from the cottage cheese and strawberries. Hope that helps!
Delicious – I make a bunch for the week and use it as my afternoon snack. Good call on the strawberry – delicious and low cal!
