Ingredients:  

For the Salad

  • 4 ears corn, cut from the cob (or 3–4 cups canned/frozen, drained)
  • 1/2 box (210 g) macaroni cooked al dente and cooled
  • 1 cup red pepper, diced small (about ¾ of a pepper)
  • 1 jalapeño, finely diced (seeds removed if less heat desired)
  • 5 green onions, diced (about 1 cup)
  • 1 cup fresh cilantro, chopped (plus more for garnish)
  • 200 g feta cheese, crumbled (or fresh white cheese)
  • 3 tbsp hot sauce (optional)

For the Dressing

  • 1/2 cup sour cream
  • 1/3 cup mayonnaise
  • zest of 3 limes
  • juice of 2 limes
  • 1 tsp garlic (minced or jarred)
  • 2 tsp taco seasoning
  • 1 1/2 tsp white sugar
  • 1 tsp salt
  • 2 tbsp vegetable oil (or other neutral oil

For Garnish

  • reserved corn, peppers, green onions, cilantro, and cheese
  • extra taco seasoning (optional)

Instructions: 

  • Bring a large pot of salted water to a boil.
  • Cook the macaroni according to package instructions until al dente.
  • Drain and rinse under cold water to stop the cooking. Set aside to cool.
  • In a small bowl, whisk together the sour cream, mayo, lime zest, lime juice, garlic, taco seasoning, sugar, and salt.
  • Slowly drizzle in the vegetable oil while whisking. Set aside.
  • If using fresh corn, cut the corn kernels from the cob. For extra flavor, char them in a large skillet or on the grill over medium heat until lightly browned. If using canned or frozen corn, make sure it’s well drained before adding.
  • In a large bowl, combine the cooked pasta, corn, red pepper, jalapeño, green onions, cilantro, and feta cheese.
  • Pour the dressing over the top and toss gently until everything is evenly coated.
  • Sprinkle the reserved corn, peppers, onions, cilantro, and cheese over the top and garnish with a pinch of taco seasoning for extra color.
