Beet and Ginger Juice

Prep Time 10 minutes
Servings 4

Ingredients:  

  • 1/2 cup fresh ginger
  • 2 beets
  • 2 carrots
  • 2 oranges, peeled
  • 2 green apples
  • 2 lemons, juiced
  • 4 kale stems
  • 1 1/2 cups water
  • pinch of salt
  • pinch of pepper

Instructions: 

  • Place all ingredients into a blender or food processor. Blitz until the mixture is fine.
  • Pass the mixture through a fine mesh sieve to strain. Use a spatula to press and push all the extra liquid through. (Make sure to Dave the pulp for a muffin recipe coming soon!)
  • Store the juice in a mason jar or airtight container in the fridge for 5–7 days.
  • This recipe makes about a liter of juice—enough to fuel your week with vibrant, beet-powered energy. Cheers to your wellness, friends!
