Into a bowl, mash up 2 ripe bananas. Add in 1 cup of milk and mix until smooth.
Next add in 2 eggs along with 1 1/2 cups egg whites. Mix that all together until fully combined.
Add in 2 1/3 cup flour, 1 1/4 cup protein powder, 2 tsp baking powder, 1 tsp coconut extract and 1/2 tsp salt. Give that a good mix until nice and smooth.
Lastly add in your fresh for frozen blueberries and mix.
Place a medium non stick frying pan over medium heat. Add in some oil or butter and fry each pancake until golden brown on each side.
Serve with more blueberries, fresh banana and lots of maple syrup!
