It’s no secret that I am a massive pancake guy, and these Blueberry Protein Pancakes might be my new go-to. All the fun and fluff of a traditional pancake, but with the added gains of a scoop of protein powder. Add whatever fruit you want, fry ’em up, and enjoy!

Using Protein powder in baked goods- it’s a thing.

Protein powder doesn’t just have to be mixed with water, shaken and consumed on your way to the gym. There are plenty of ways to use protein powder that actually taste good!

Baking with protein powder works because it binds and mixes well with other dry ingredients, making it a seamless addition to many baking recipes.

Blueberry Protein Pancakes- A little extra something. 

So when making this for the first time, I realised that I was out of vanilla extract. So in a last-second effort to get this recipe made, I subbed in equal parts coconut extract.

I have to say, it takes these pancakes to an almost tropical flavour profile. Mixed with the blueberries, fresh bananas, and maple syrup, it’s a combination that really worked well.

Make it in batches – freeze the rest.

One fun little trick that I’ve learned over the years of trying to get picky children to eat in the morning is freezing pancakes.

These specific pancakes freeze and heat really well.

I’ll make a batch or two of the batter, spend a little extra time frying them off, let them cool, and then toss them in the freezer.

Pull them out, hit them in the microwave, add a little butter and syrup, and you have a supercharged, easy, and quick meal-prepped breakfast!

Blueberry Protein Pancakes

Blueberry Protein Pancakes

Servings 6

Ingredients:  

  • 2 ripe Bananas mashed
  • 1 cup Milk
  • 2 Eggs
  • 1 1/2 cup Egg Whites
  • 2 1/3 cup Flour
  • 2 tbs Baking Powder
  • 1 1/4 cup Vanilla Protein Powder
  • 1 tsp Coconut Extract
  • 1/2 tsp Salt
  • 2 cups Blueberries

Instructions: 

  • Into a bowl, mash up 2 ripe bananas. Add in 1 cup of milk and mix until smooth.
  • Next add in 2 eggs along with 1 1/2 cups egg whites. Mix that all together until fully combined.
  • Add in 2 1/3 cup flour, 1 1/4 cup protein powder, 2 tsp baking powder, 1 tsp coconut extract and 1/2 tsp salt. Give that a good mix until nice and smooth.
  • Lastly add in your fresh for frozen blueberries and mix.
  • Place a medium non stick frying pan over medium heat. Add in some oil or butter and fry each pancake until golden brown on each side.
  • Serve with more blueberries, fresh banana and lots of maple syrup!
