I know we might ALL be a little tired of the cottage cheese craze, but guys…this one is SO good. This cottage cheese toast has everything I want in a quick lunch: thick bread, creamy cottage cheese, sharp cheddar, green onion, pickled jalapeños and Everything Bagel seasoning. I pop the whole thing under the broiler until the cheddar is bubbling and the sourdough gets crispy around the edges, then finish it with hot honey. This isn’t one of those lunches where I’m looking for a snack 20 minutes later. I love this for a weekend brunch, but it’s easy enough to throw together on a weekday when I want something fast and good. Cottage cheese toast with cheese, jalapeño and hot honey.

Cottage Cheese Toast

Prep Time 5 minutes

Ingredients:  

  • 2 thick slices sourdough bread
  • 1 cup cottage cheese
  • 1/2 cup sharp cheddar cheese shredded, divided
  • 2 tbsp pickled jalapeños, finely chopped, plus a few slices for topping
  • 2 green onions, thinly sliced plus more for garnish
  • 1 tsp Dijon mustard
  • 1 tsp Everything Bagel seasoning, plus more for topping
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • hot honey for drizzling

Instructions: 

  • Toast the sourdough just until it starts to crisp. Don't let it get too brown since it will go under the broiler again.
  • In a medium bowl, combine the cottage cheese, ¼ cup of the cheddar, chopped pickled jalapeños, green onion, Dijon mustard, Everything Bagel seasoning, garlic powder, a small pinch of sea salt and freshly cracked black pepper.
  • Divide the cottage cheese mixture between the two slices of sourdough, spreading it generously right to the edges.
  • Top each slice with the remaining cheddar, a few extra slices of pickled jalapeño and another sprinkle of Everything Bagel seasoning.
  • Place the toast under the broiler for 2–3 minutes, watching very closely, until the cheddar is melted and bubbling and the edges of the sourdough are golden and crisp.
  • Finish with freshly cracked black pepper, sliced green onion and, if you want a little sweet with the heat, a drizzle of honey or hot honey.
  • Serve immediately while the toast is hot and crispy.

Why Cottage Cheese on Toast Actually Works

Cottage cheese has had its moment and for good reason.

It’s creamy, mild and works with both sweet and savoury flavours. It also brings protein and nutrients like calcium and other vitamins to the table.

But texture matters to me.

For this recipe, I wanted a nice creamy cottage cheese base because we’re spreading it generously over thick sourdough. Add shredded cheddar and it becomes even richer once everything gets warm and bubbly under the broiler.

Then the pickled jalapeños cut through all that richness and such a nice balance.

It’s such a perfect combo in my opinion.

Tips for Really Good Cottage Cheese Toast

Start With Thick Sourdough

You need bread with some structure here.

I love a thick bread because it’s sturdy enough to hold a generous amount of cottage cheese without getting soggy. Thick slices also give you that crispy outside and chewy centre.

Whole wheat bread, a hearty whole-grain bread or even a thick gluten free bread can work too.

Toast the Bread, But Only Lightly

This is important!

The bread is going under the broiler after you add the cottage cheese mixture, so don’t fully toast it the first time.

I toast it just until it starts to crisp. That gives us a head start without leaving the edges burnt by the last step.

Freshly Grate the Cheddar

Freshly shredded cheddar melts SO much better than pre-shredded cheese.

I use sharp cheddar because cottage cheese is fairly mild and I want that extra punch of flavour.

Chop the Jalapeños Finely

I want a little jalapeño in every bite rather than one huge spicy mouthful.

Finely chop the jalapeños going into the cottage cheese mixture, then add a few slices on top so everyone knows exactly what they’re getting into.

Watch the Broiler!

Two or three minutes goes FAST under a broiler.

Stay close and pull the toast when the cheddar is bubbling and the edges of the sourdough are golden and crisp.

Cottage Cheese Toast Recipe: The Hot Honey Situation

Hot honey might be optional on paper, but I’m going to strongly suggest it.

That little drizzle of honey against the salty cheddar and spicy jalapeños is SO good.

If you don’t have hot honey, regular honey works too because you’re already getting some heat from the jalapeños.

And if you want more heat? A little hot sauce or some red pepper flakes would be an easy variation.

Sweet vs. Savoury Cottage Cheese Toast

This is one of the reasons cottage cheese toast hasn’t completely lost me yet—there are SO many ways to make it.

My recipe is firmly on the savoury side.

But if you want sweet cottage cheese toast recipes, start with cottage cheese and fresh fruit. Strawberries, blueberries, raspberries, peaches or sliced banana would all be great with a drizzle of honey.

You could even add peanut butter, almond butter or another nut butter for extra richness and healthy fats, or finish it with a sprinkle of cinnamon.

For savoury cottage cheese toast ideas, think avocado, tomato, cucumber, red onion, dill, Everything Bagel seasoning, freshly cracked black pepper or flaky sea salt.

An egg on top would make it even heartier, and cottage cheese toast with smoked salmon, cucumber and dill sounds pretty fantastic to me too.

The possibilities are endless.

What Cottage Cheese Should I Buy?

Use your favorite brand.

Seriously.

Cottage cheese varies quite a bit in texture, curd size and moisture, so use one you already know you enjoy eating.

If your cottage cheese is especially watery, you can drain off a little excess liquid before making the mixture. You want it creamy, not soupy.

How Much Protein Is in Cottage Cheese Toast?

Between a full cup of cottage cheese, ½ cup of cheddar and hearty sourdough, this is definitely a protein-forward meal with close to 50 grams.

That’s a big part of why I find it so satisfying.

I don’t really care about chasing a food trend just because it’s trendy. If I’m going to keep making something, it needs to taste good and actually fill me up.

This does both.

If you have cottage cheese in the fridge and want to take it in a completely different direction, try cottage cheese pancakes.

A simple version combines cottage cheese with eggs, flour, baking powder and a little sweetness, then cooks the pancakes in a skillet until golden. Cottage cheese adds protein while giving the centres a soft texture, and you can keep the curds intact or blend the batter if you prefer it smoother. Serve them warm with honey, maple syrup or fresh fruit.

Both! That’s one of the things I love about it. My recipe is savoury with cheddar, jalapeños, green onion and Dijon, but cottage cheese also works beautifully with berries, peaches, banana and honey.

How do you keep cottage cheese toast from getting soggy?

Use thick, sturdy bread and lightly toast it before adding the cottage cheese. If your cottage cheese contains a lot of excess liquid, drain some of it first.

Can I make cottage cheese toast ahead?

I wouldn’t assemble it ahead because the bread will eventually soften. You can make the cottage cheese mixture in advance, keep it covered in the refrigerator and assemble the toast when you’re ready to eat.

Can I use another bread?

Absolutely. I love sourdough, but a sturdy whole-grain or whole wheat bread would also work. A good gluten free brad is also a great option. Just make sure your slices are thick enough to support the topping.

Trendy or not, I’m keeping this one.

It’s cheesy, spicy, crispy, creamy and has that little bit of sweetness from the hot honey that makes me immediately want another bite.

More importantly, I can make it in about 10 minutes with ingredients I can easily keep in the fridge.

That’s what makes a recipe worth repeating for me.

A quick weekday lunch, weekend brunch, post-workout meal or those random moments when you’re hungry and want something substantial—this cottage cheese toast gets it done.

And yes, I know we’re all supposed to be over cottage cheese by now.

Apparently I’m not.
