This is one of those recipes that quietly changes your mornings. These baked cottage cheese eggs are everything I want in a breakfast: high-protein, satisfying, easy to prep ahead, and somehow still really delicious. Think of it as a cross between Starbucks egg bites and a savory cheesecake — creamy, fluffy, and packed with flavor. This is an egg bake recipe that actually works for real life. No fussy steps. No standing over the stove in the morning. Just simple ingredients, good technique, and a protein-packed result that keeps you full for hours.
I’ve been on a big meal prep kick lately, and this cottage cheese egg bake has earned a permanent spot in my fridge. You make it once, slice it up, store it in airtight containers, and then all week long you’ve got breakfast handled. Pop a square in the microwave, add a little hot sauce if that’s your thing, and you’re out the door.

Why Cottage Cheese Belongs in Eggs
If you’re new to cottage cheese eggs, this recipe is a great introduction. Blending cottage cheese into the egg mixture completely transforms the texture. It adds creaminess, boosts the protein, and gives the bake that almost custardy, cheesecake-like feel without tasting heavy.
Cottage cheese is high in calcium and has a good amount of protein in each serving. That’s one of the reasons this bake is so nutritious. Between the cottage cheese, large eggs, and egg whites, you’re getting serious grams of protein without relying on anything processed.
The key is blending it until smooth. Once it’s blitzed, you’d never guess there’s cottage cheese in there — you just get a rich, fluffy egg bake that slices clean and reheats beautifully.

A Breakfast That Actually Holds You Over
One of my favorite things about this egg casserole-style dish is how balanced it is. You’ve got protein from the eggs and cottage cheese, some healthy carbohydrates from the sweet potato, and a good mix of veggies to round things out.
Sweet potatoes bring natural sweetness, texture, and nutrients like potassium, while the onion, red bell pepper, and green onions add savory depth. Everything gets cooked gently first in a skillet over medium heat, which helps develop flavor before the eggs even go in.
Once the egg mixture hits the pan and slides into the preheated oven, the whole thing sets up into a cohesive, sliceable dish that feels hearty without being heavy.

Tips & Tricks for the Perfect Cottage Cheese Egg Bake
Blend the egg mixture well
This is non-negotiable. Blending the cottage cheese with the eggs and egg whites creates that silky texture and keeps the bake from feeling grainy.
Cook the veggies first
Sautéing the veggies removes excess moisture and concentrates flavor. This is how you avoid a watery egg bake.
Use an oven-safe pan
Going from stovetop to oven in the same pan keeps things simple and cuts down on dishes.
Let it rest
Once baked, let the egg bake sit for a few minutes before slicing. It sets up better and holds together beautifully.
Season confidently
Eggs need salt. Don’t be shy — seasoning properly is what makes this dish craveable.

Make These Baked Cottage Cheese Eggs Work for You
This cottage cheese egg bake is great as written, but it’s also flexible. Once you’ve made it once, you’ll see how easy it is to customize.
You could:
- Add bacon if you want something a little more indulgent
- Swap in zucchini or chopped spinach for different veggie combos
- Use feta cheese instead of cheddar cheese for a saltier bite
- Add baby spinach for extra greens
- Finish slices with chives or hot sauce
- Add a touch of Greek yogurt for an extra creamy texture
The base stays the same — just adjust the mix-ins depending on what’s in your fridge.

Baked Cottage Cheese Eggs: Perfect for Meal Prep (and the Freezer)
This is where this recipe really shines. Once cooled, slice the bake and store it in airtight containers in the fridge. It keeps well for several days and reheats like a dream.
You can also freeze individual portions. Wrap them well, stash them in the freezer, and reheat straight from frozen in the microwave. That makes this an ideal grab-and-go breakfast for busy weeks.
Having a healthy breakfast option that’s filling, protein-rich and ready to go makes mornings way easier — especially when you don’t feel like cooking.

Why This Egg Bake Recipe Is a Keeper
I love recipes that feel realistic. This one doesn’t ask you to wake up early, dirty a bunch of bowls, or follow complicated steps. It’s simple, reliable, and built around ingredients that actually do something.
This baked cottage cheese eggs recipe delivers on flavor, texture, and nutrition. It’s the kind of breakfast you make once and then keep coming back to because it fits your life — not the other way around.
If you’ve been looking for a high-protein breakfast that’s easy to prep, easy to reheat, and genuinely enjoyable to eat, this egg bake is it.

Excellent
Love it, Pat!
This was a family hit. Served w tomatillo/poblano sauce. Thanks for your recipes!
I made this and the flavour is delicious but I find it quite watery. Is there a way to avoid this? I cooked the veggies and used 2 percent cottage cheese.

Love those additions!
Sat Feb 7/26. Tried recipe this morning, not bad but before starting I was questioning serving of 4, and 2 cups egg whites and 2 cups cottage cheese. I made mine slightly more sweet potato, about 1/3 cheddar, 1/3 herbed parm. Next time I may have more veg and cool it down then pulse 1/2 veg with cottage cheese and egg.
This is AMAZING! For non-egg lovers, here’s the teaser….it doesn’t taste “eggy”. 39g of protein and only 14g of fat and 23g of carbs for one quarter of the pan (if you can actually finish that much!). This is a protein powerhouse with the flavor and satisfaction level to back it. Served for dinner with roasted broccoli.
Love it! thanks for sharing!
Thank you for this simple, but tasty and satisfying recipe. I have made it every week since I saw it posted! It looks amazing when it comes out of the oven and I just add some hot sauce and I’m good to go!
Love hot sauce or sriracha with this too, Ginas! Thanks for sharing!
