I love finding unexpected ways to make everyday breakfasts feel a little more special, and this instant steel cut oats recipe has become one of my favorites. It starts with creamy Earl Grey-infused oats and finishes with buttery caramelized peaches for a breakfast that’s comforting, fragrant, and just a little bit fancy.

The inspiration for this recipe actually came from a trip to London, where I visited the original Twinings tea shop. I came home with far more Earl Grey than I needed, but it also gave me a completely new appreciation for cooking with tea instead of just drinking it.

I’ve made this recipe with both peaches and plums, and while they’re both delicious, peaches win every time. As they caramelize, they become soft, sweet, and almost jammy, pairing perfectly with the floral citrus notes of the Earl Grey. Steel Cut Oats Recipe with Earl Grey and Peaches

Ingredients:  

  • 2 Earl Grey tea bags
  • 1 cup water
  • 1 1/2 cups milk (or use all water or your favorite plant-based milk, if desired)
  • 1 cup instant steel cut oats
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar (optinal)
  • 2 semi-firm yellow peaches, sliced
  • 1 tbsp butter
  • 1 tbsp brown sugar
  • fresh mint for serving

Instructions: 

  • In a medium saucepan, combine the Earl Grey tea bags, water, and milk. Bring to a boil over high heat.
  • Once boiling, remove the tea bags and set them aside—do not discard them, as you'll use them later.
  • Stir in the instant steel cut oats, vanilla extract, salt, and 2 tablespoons of brown sugar (if using).
  • Reduce the heat to medium-low and simmer for about 10 minutes, stirring occasionally, until the oats have thickened and are tender.
  • While the oats are cooking, melt the butter in a large pan over medium heat.
  • Allow the butter to lightly brown before adding the sliced peaches.
  • Cook the peaches for 3–5 minutes, stirring gently, until they begin to caramelize.
  • Sprinkle in the remaining tablespoon of brown sugar and continue cooking for another minute.
  • Squeeze the reserved Earl Grey tea bags over the peaches to deglaze the pan and add an extra layer of tea flavor.
  • Stir gently, then remove the peaches from the heat.
  • Divide the Earl Grey oats between serving bowls and spoon the warm caramelized peaches over the top.
  • Garnish with fresh mint, if desired, and serve immediately.

I still remember walking into the original Twinings tea shop in London thinking I’d pick up a box or two of tea. Instead, I left with enough Earl Grey to fill a good part of my suitcase.

Tea is something most of us think about drinking, but it’s also an incredible cooking ingredient.

Just like cinnamon or vanilla, tea can infuse food with layers of flavor without adding extra sweetness or richness. Earl Grey happens to be especially perfect because the bergamot naturally tastes bright, floral, and slightly citrusy.

They’re less processed than instant oatmeal packets, but much quicker than traditional steel-cut oats, which is exactly why I love using them in this recipe.

Ingredient Tips

A few simple choices make a big difference in oat breakfast recipes.

Choose peaches that are ripe but still slightly firm. Overripe fruit will become mushy before it has a chance to caramelize.

When slicing the peaches, keep them relatively even so they cook at the same rate in the pan.

I also recommend using whole milk if you can, as it creates the creamiest bowl of oatmeal. If you’d rather keep things dairy-free, your favorite plant-based milk works beautifully too, or you can simply use all cups of water instead.

The brown sugar in the oats is completely optional, especially if your peaches are wonderfully sweet. If you prefer, finish everything with a drizzle of maple syrup right before serving.

Finally, don’t forget the salt. Even just a teaspoon or a pinch of fine sea salt helps bring out the natural sweetness of both the peaches and the Earl Grey without making the dish taste salty at all.

I often make a big batch on Sunday so breakfast is ready for busy mornings all week long. Store the cooked oatmeal in an airtight container in the refrigerator for up to 4 days. I recommend storing the caramelized peaches separately if possible so they keep their texture.

When you’re ready to eat, simply add a splash of milk or water to loosen the oats and reheat them in the microwave or in a saucepan over medium-low heat, stirring occasionally until warmed through.

You can even freeze individual portions for up to 3 months. Let them thaw overnight in the refrigerator before reheating.

I still come back to these Earl Grey oats whenever I have a little extra time, though. There’s something about the warm tea-infused oatmeal and caramelized peaches that feels comforting, cozy, and just a little bit special.

I substituted the brown sugar for 2 tablespoons of maple syrup, I added more maple syrup to the custard mixture because it wasn’t sweet enough for my taste.
What should I have done differently in your opinion?
