Butter Chicken

Ingredients:  

  • CHICKEN (Feel free to substitute for tofu or Paneer)
  • 1 cup full-fat yogurt
  • 1 tbsp garam masala
  • 1 tbsp kosher salt
  • lbs boneless, skinless chicken thighs. Sliced into bite sized chunks

Butter Chicken Gravy

  • 2 tbsp vegetable oil
  • 1 yellow onion, diced
  • 1 2-inch knob of ginger, finely diced
  • 6 cloves sliced garlic
  • Salt and pepper to taste
  • 2 tsp paprika
  • 2 tsp ground cumin
  • 1 tbsp garam masala
  • tsp turmeric powder
  • 3 green cardamom pods (optional)
  • 1 black cardamom pod (Optional)
  • 1 cinnamon stick (optional)
  • 1 tsp kashmiri chile powder (optional)
  • ½ tsp fenugreek leaves (optional find at specialty grocery)
  • 14 oz crushed tomatoes
  • cup water
  • 1 cup (240ml) heavy cream
  • 2 tbsp (28g) unsalted butter

Fresh Rita

  • cup plain yogurt
  • 1 tbsp cumin
  • 1 tsp salt
  • 1 cup shredded cucumber
  • 1 cup basmati rice
