Cauliflower Chickpea Couscous Salad

Ingredients:  

For the salad.

  • 1 cup Couscous See package for instructions
  • 1 large Head of cauliflower Roasted
  • 1 Apple Diced
  • 1 cup Rasins
  • 1 cup Fresh mint Chopped
  • 1 cup Parsley Chopped
  • 1/2 cup Green onions Sliced
  • 1 can Chickpeas Drained
  • 1 tbs Honey

For the dressing.

  • 2 large Lemons Juiced and zested
  • 1 cup Olive oil
  • 2 tsp Cinnamon
  • 1 tsp Salt
  • 2 tsp Curry powder
  • 1 tsp Cumin
  • 1 tsp Garlic powder

Instructions: 

  • Start by breaking apart your cauliflower and spreading onto a baking sheet. Drizzle with olive oil and then bake for 35-45 minutes at 450F. Once nice and browned, remove from the oven.
  • Follow the package instructions and cook 1 cup of couscous.
  • In a large bowl add rest of the ingredients and taste! Add additional salt and pepper if needed. Enjoy!
