Place a large pot or deep pan over medium high heat. Add in a tablespoon of olive oil and then gnocchi. Toast gnocchi in pan for 5 minutes and then remove from pan.
In same pan add in sausage meat and cook until browned. Once cooked remove from pan.
In same pan add in 3 tbs olive oil followed by leeks, onion, and garlic. Enjoy the smell for 2-3 minutes and then add in salt and pepper followed by the chicken stock and crushed tomatoes. Let simmer for 5 minutes and then add back in the gnocchi and cooked sausage.
Add in spinach, cream, parmesan, and chilli flakes if using. Taste and adjust seasoning if needed.
