Copycat Chipotle Burrito Bowl

Ingredients:  

For the Chicken

  • 1 lb boneless skinless chicken thighs
  • 1 lime, juiced and zested
  • 2 tbsp chopped cilantro
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 2 tbsp olive oil

For the Black Beans

  • 1 15 oz can black beans, drained and rinsed
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder

For the Rice

  • 1 cup basmati rice
  • 1 1/2 cups water
  • 3 tbsp fresh cilantro
  • 1 tsp salt
  • 1 tbsp olive oil

Instructions: 

  • Coat the chicken in lime juice, lime zest, cilantro, chili powder, cumin, garlic powder, salt, and olive oil. Sear in a hot pan for 4-5 minutes on each side
  • In a separate pan, sauté the black beans with olive oil, garlic powder, chili powder, and cumin over low heat.
  • Cook the rice with water, salt, and olive oil. Once done, mix in fresh cilantro.
  • Build your bowl by layering rice, beans, and chicken. Top with guacamole, hot sauce, sour cream, or your favorite extras.
