Start by preheating your oven to 475F.
Place a medium-large frying pan over medium high heat. Add in your crumbled sausage and cook for 2-3 min. Add in 1 sliced clove of garlic and 1/2 of a red onion sliced. Saute until the onion is translucent 5-6 min. Season with 1 tsp of salt.
Remove the onions and sausage from the pan. Do not discard or clean the pan, we will be cooking the pizza in it.
Into a bowl combine 3 1/4 cups of flour, 4 tbs of baking powder, 1 tsp of salt and 1 tbs of oil. Mix until a shaggy dough, turn out on a dusted surface and kneed until springy and no longer wet.
Press the dough into a circle, place into the bottom of the frying pan, making sure to stretch and cover the entire bottom of the pan.
Top your dough with the sausage and onions, adding your tomatoes, jalapeno, ricotta and chive. Turn your burner back to medium for 5min. After 5 min bake in the oven for 15-16 mins. For extra colour and flavour, increase heat to Broil for 2-3 min. (keep your eye on the pizza as it can easily burn!)
Once the crust is golden brown and the toppings are slightly charred, remove from the oven and let cook slightly. Finish with more chives and parm.
