Gut Health Salad

Ingredients:  

  • 5 cups arugula
  • 1 cup sauerkraut
  • 1 beet, cooked and diced
  • 1 cup pumpkin seeds
  • 1 avocado, diced
  • 1/2 cup goat cheese
  • 2 tbs olive oil
  • 1/2 lemon, juiced
  • 1 tbsp maple syrup
  • 1 tsp pepper
