Jalapeno popper pasta salad in a white bowl.

Jalapeno Popper Salad

Servings 6 people

Ingredients:  

  • 450 g spiral pasta
  • 8 sliced bacon, cooked and crumbled
  • 1 cup cheddar cheese, shredded
  • 1/2 cup pickled jalapenos, chopped
  • 1 fresh jalapeno, deseeded and diced
  • 1/2 cup green onion, sliced

dressing

  • 3 oz cream cheese, softened
  • 1/2 cup light mayo
  • 1/2 cup greek yogurt
  • 1/2 lemon, juiced
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1 tbsp garlic powder
  • 1 tbsp onion powder

Instructions: 

  • Cook pasta following the package instructions. Drain water, pour noodles into a big bowl and toss in oil so noodles don't stick together.
  • Into the bowl add in crumbled bacon, cheddar cheese, fresh and pickled jalapenos, and green onion.
  • In a small bowl mix together cream cheese, greek yogurt, mayo, lemon juice, pepper, salt, garlic powder, onion powder. Pour dressing over pasta and toss thoroughly.
  • Serve immediately or allow to sit in the fridge. Enjoy!!
