Jalapeno Popper Salad
Ingredients:
- 450 g spiral pasta
- 8 sliced bacon, cooked and crumbled
- 1 cup cheddar cheese, shredded
- 1/2 cup pickled jalapenos, chopped
- 1 fresh jalapeno, deseeded and diced
- 1/2 cup green onion, sliced
dressing
- 3 oz cream cheese, softened
- 1/2 cup light mayo
- 1/2 cup greek yogurt
- 1/2 lemon, juiced
- 1/2 tsp pepper
- 1 tsp salt
- 1 tbsp garlic powder
- 1 tbsp onion powder
Instructions:
- Cook pasta following the package instructions. Drain water, pour noodles into a big bowl and toss in oil so noodles don't stick together.
- Into the bowl add in crumbled bacon, cheddar cheese, fresh and pickled jalapenos, and green onion.
- In a small bowl mix together cream cheese, greek yogurt, mayo, lemon juice, pepper, salt, garlic powder, onion powder. Pour dressing over pasta and toss thoroughly.
- Serve immediately or allow to sit in the fridge. Enjoy!!
