La Scala Bean Salad

Ingredients:  

  • 1 19oz can chickpeas, drained and rinsed
  • 1 19 oz can white beans, drained and rinsed
  • 1/4 cup red onion, diced
  • 2 bell peppers, diced
  • 1 1/2 cup parsley, chopped
  • 1/2 cup banana peppers, chopped
  • 1/3 cup roasted red peppers, chopped
  • 1 cup sliced salami
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tbs oregano
  • 1 tbs grainy mustard
  • 1 pinch Salt + Peppers

Instructions: 

  • This is an easy recipe to assemble! Simply add all ingredients into a bowl and mix! Serve immediately or keep in the fridge. Will last for 3-5 days! Enjoy!
