Lighter Cobb Salad

Ingredients:  

Dressing

  • 1/3 cup olive oil
  • 3 tbs red wine vinegar
  • 1 tbs dijon mustard
  • 2 tbs honey
  • 1 pinch salt
  • 1 tsp black pepper

Salad

  • 2 Cooked Chicken Breasts, diced
  • 6 pieces turkey bacon, chopped
  • 3 Hard boiled eggs, chopped
  • 1/2 can chickpeas, rinsed
  • 3 cups romaine or iceberg lettuce
  • 1 avocado, diced
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1 cup tomatoes, diced

Instructions: 

  • In a small bowl mix together the dijon mustard, red wine vinegar, honey, salt, and pepper. Slow stream in the olive oil. Set off to the side.
  • In a bowl layer in the romaine lettuce, and then line up all the other ingredients on top in any order you like. Once ready to serve, pour on the dressing, toss, and enjoy!!
