Mexican Street Corn Dip

Ingredients:  

  • 5 large Ears of corn Charred and sliced off the cob
  • 1/2 large Yellow onion Diced
  • 2 large Garlic cloves Minced
  • 1/2 cup Red bell pepper Diced
  • 1/2 large Jalapeno Deseeded and diced
  • 1/2 cup Green onion Sliced thin
  • 2 tsp Chilli powder
  • 1 tsp Cumin
  • 2 tsp Smoked paprika
  • 1 tbs Olive oil
  • 6 oz Cream cheese
  • 1/3 cup Sour cream
  • 1/3 cup Mayo
  • 1 large Lime Juiced

For the garnish.

  • 1 large Charred ear of corn Sliced off the cob
  • Fresh cilantro
  • Diced Jalapeno
  • Lime Zest

Instructions: 

  • In an oiled pan set over medium heat add in onion, garlic, red pepper, and jalapeno. Stir and allow to saute for 3 minutes.
  • Add in corn, green onions, chili powder, cumin, paprika, pepper, and toss together.
  • Next up add in cream cheese, sour cream, mayo, and lime juice. Stir to combine.
  • Remove from heat and pour into serving bowl.
  • Top with extra corn, feta cheese, cilantro, jalapeno, and lime zest.
  • Serve with quality tortilla chips.
