Mexican Summer Corn Salad

Mexican Summer Corn Salad

Prep Time 20 minutes

Ingredients:  

  • 4 large Ears of Corn Grilled
  • 1 large Red Pepper Diced
  • 1/4 cup Jalapeno Chopped
  • 1/4 cup Cortina or Feta cheese
  • 1 large Avocado Diced
  • 1/4 cup Fresh Cilantro
  • 1 large Lime Juiced

For the Dressing

  • 3 tbs Greek yogurt
  • 3 tbs Mayonnaise
  • 1 large Garlic clove Minced or grated
  • 1 large lime Zested and juiced
  • 1 tsp Hot Sauce
  • Salt to taste

Instructions: 

  • Heat your grill to 350F-400F. Grill 4 ears of corn decently charred. Once cooked, cut the corn off the cob and place in a bowl.
  • Into the bowl add red pepper, onion, jalapeño, feta cheese,  avocado, cilantro, and the juice on one lime.
  • In a smaller bowl mix together Greek yogurt, mayo, garlic, lime juice and zest, hot sauce, and salt.
  • Pour dressing over your mixed salad. Garnish with more crumbled cheese, and a handful of fresh cilantro.
