Tiramisu Baked Oatmeal

Ingredients:  

  • 1 cup apple sauce
  • 2 1/4 cups oats
  • 1/2 cup vanilla protein powder
  • 1/2 tsp baking powder
  • 3 tbsp sweetener
  • 1 tbsp olive oil
  • 1/2 cup espresso
  • 1.5 cups oat milk I love Earth's Own

Dairy Free Cream Cheese Icing

  • 8 oz Dairy free cream cheese or regular
  • 3/4 cup greek yogurt
  • 1/2 cup icing sugar
  • 1 tsp vanilla
  • 1 tbs cocoa powder for sprinkling

Instructions: 

  • Preheat oven to 350 F and prepare a 9X9 brownie pan
  • In a bowl mix together apple sauce, oats, vanilla protein powder, baking powder, sweetener, oil, coffee, and oat milk. Mix and pour into prepared baking pan. 
  • Place in the oven and cook for about 40-45 minutes, or until golden and firm to touch.
  • In a small bowl mix together cream cheese, yogurt, icing sugar, and vanilla. 
  • Smear the icing on the top of the cooled oats and sprinkle top with cocoa powder
