Vegan Gluten-free Protein Apple Crisp

Ingredients:  

Apple mixture

  • 11 apples peeled and diced
  • 1 tbsp cinnamon
  • ½ tsp nutmeg
  • ½ cup chopped dates
  • 10.6 grams stevia sweetener (or 8 tsp sugar)
  • 1 tsp vanilla
  • 1 tbsp melted coconut oil
  • 6 tbsp maple syrup
  • pinch of salt

crisp mixture

  • cups quick oats
  • 1 tbsp cinnamon
  • cup vegan protein powder (I like earthli)
  • cup hemp seeds
  • ½ tsp vanilla
  • cup melt coconut oil
  • cup maple syrup
  • pinch of salt

Instructions: 

  • Pre heat oven to 350.
  • In large bowl, toss together diced apples, cinnamon, nutmeg, chopped dates, stevia (or sugar), vanilla, coconut oil, maple syrup, and salt. Mix together and pour into large baking dish.
  • No let's move onto the crumble! In the same bowl that the apples were in, add oats, cinnamon, protein powder, hemp seeds, melted coconut oil, maple syrup, and salt.
  • Pour the oat mixture over the apples and spread evenly.
  • Place in oven and bake for 50 minutes.
  • Remove from oven and enjoy!
