White Chocolate Mango Coconut Bars 

Ingredients:  

  • 2 cups Mango Fresh or frozen.
  • 1 cup Greek yogurt
  • 1 tsp Vanilla extract
  • 1 1/2 cups White chocolate

Instructions: 

  • In a bowl mix together chopped mango, greek yogurt, vanilla. Scoop out bite sized balls onto a baking sheet that is lined with parchment paper. Place baking sheet in freezer for no less then 3 hours.
  • In a bowl melt 1 1/2 cups of white chocolate. I did this in the microwave but you can use a double boiler over medium low heat.
  • Drop  the frozen yogurt bites into the chocolate to coat. Sprinkle with salt and toasted coconut while chocolate is still melted. Allow the chocolate to cool and then enjoy!
