The Magic of Gnocchi
Let’s discuss the star of this soup: gnocchi. These little potato pillows are soft, chewy, and perfect for soaking up the delicious flavors of the broth. Toasting the gnocchi before adding it to the soup is a great way to add some extra texture and flavor. It helps the gnocchi hold its shape and gives it a slightly crispy exterior, which contrasts beautifully with the creamy soup.
Using store-bought gnocchi makes this recipe quick and easy, but if you’re feeling adventurous, you can always make your own. The gnocchi soaks up the savory broth. This creates perfect bite-sized pieces of comfort that make the dish satisfying.

A Creamy, Flavorful Broth
The base of this chicken and gnocchi soup is a rich, creamy broth that’s packed with flavor. We begin with chicken stock and crushed tomatoes.
This mix gives the soup a rich, savory flavor. The tomatoes add a touch of sweetness. The cream ties it all together, making the broth velvety smooth.
The addition of leeks, onions, and garlic brings a fragrant depth of flavor that makes the soup feel cozy and warm. These fragrant vegetables cooked in olive oil form the base of the soup. When you add the sausage, it creates a perfect mix of savory and sweet.
For a little bit of heat, you can throw in some red pepper flakes, but that’s totally optional. The chicken sausage already adds plenty of flavor, but if you like your soups with a bit more kick, don’t hold back on the spice.

Chicken Sausage for a Savory Kick
The addition of chicken sausage gives this soup a hearty, protein-packed boost. The sausage adds a savory, slightly spicy element that complements the creamy broth and tender gnocchi perfectly. It also cooks quickly, making this soup a great choice for busy weeknights. You can enjoy great flavor even when you’re short on time.
You can pick your favorite type of chicken sausage. It can be a classic Italian style or a spicier option. Make sure to take the sausage out of the casing before you brown it in the pan. This helps it break into bite-sized pieces that are easy to scoop up with the gnocchi.
