Cottage Cheese Queso

Servings 1.3 litre

Ingredients:  

  • 750 mls cottage cheese
  • 1 package taco seasoning I used old el paso
  • 1 cup cheddar cheese, shredded
  • 1/4 cup water
  • 1/2 lb ground beef, cooked
  • 1/2 cup pickled jalapeños, chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup cherry tomatos, diced
  • 1/4 cup cheddar, shredded
  • 1/4 cup green onions, sliced
  • 1 pinch salt

Instructions: 

  • Into the bowl of a blender or food processor, blend together cottage cheese, cheddar, taco seasoning, and water. Once smooth pour into large bowl.
  • Add in cooked ground beef, pickled jalapeños, cherry tomatoes, cilantro, green onions, extra cheddar, and salt. Stir and adjust seasoning if needed! Enjoy with nacho chips!
