Cottage Cheese Queso
Ingredients:
- 750 mls cottage cheese
- 1 package taco seasoning I used old el paso
- 1 cup cheddar cheese, shredded
- 1/4 cup water
- 1/2 lb ground beef, cooked
- 1/2 cup pickled jalapeños, chopped
- 1/2 cup cilantro, chopped
- 1/2 cup cherry tomatos, diced
- 1/4 cup cheddar, shredded
- 1/4 cup green onions, sliced
- 1 pinch salt
Instructions:
- Into the bowl of a blender or food processor, blend together cottage cheese, cheddar, taco seasoning, and water. Once smooth pour into large bowl.
- Add in cooked ground beef, pickled jalapeños, cherry tomatoes, cilantro, green onions, extra cheddar, and salt. Stir and adjust seasoning if needed! Enjoy with nacho chips!
