How to make cold sesame noodles

  1. Cook the Noodles: Start by cooking the brown rice spaghetti according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process and cool the noodles down. I suggest tossing them in some sesame oil to avoid sticking.
  2. Prep the Veggies: While the noodles are cooking, prep your veggies. Halve the cherry tomatoes, shred the carrots, slice the green onions, and trim the snow peas. These vibrant veggies will add a delightful crunch and freshness to the dish.
  3. Make the Dressing: In a medium bowl, whisk together the soy sauce, tahini, almond butter, rice vinegar, lime juice, and toasted sesame oil. This dressing is the star of the show, offering a perfect balance of savory, tangy, and nutty flavors.
  4. Assemble the Dish: In a large bowl, combine the cooked and cooled noodles, cherry tomatoes, shredded carrots, green onions, and snow peas. Pour the dressing over the noodle mixture and toss everything together until well coated.
  5. Garnish and Serve: Sprinkle the toasted sesame seeds on top for that final touch of nuttiness. Serve immediately, or refrigerate for a few hours if you prefer it extra cold. These noodles are fantastic right out of the fridge, making them ideal for meal prep.
