Cottage Cheese Pumpkin Muffins

Ingredients:  

  • 1 1/2 cups full fat cottage cheese, blended in blender
  • 1/2 cup maple syrup
  • 2 tsp vanilla
  • 2/3 cup pumpkin puree
  • 4 eggs
  • 3 cups AP flour
  • 3 tsp baking powder
  • 3 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 3/4 cup mini chocolate chips

Instructions: 

  • Preheat oven to 360F.
  • In a large bowl mix together blended cottage cheese, maple syrup, vanilla, pumpkin puree, and eggs.
  • In same bowl add in flour, baking powder, cinnamon, nutmeg, salt, and chocolate chips. Mix to combine but do not over mix.
  • Using a ice cream scooper, scoop the battle into muffin tins. This should make 24 small-ish muffins. If you want bigger ones use two scoops per muffin.
  • Place muffins in oven for 26-30 minutes.
  • Allow to cool in pan before attempting to remove the muffins.

These are so good, I have tried the other cottage cheese recipes for muffins as well, and they are delicious. The pumpkin ones had more of a bread taste which I loved!
the only complaint I have about your recipes, is now when going to print them the layout is really weird, with huge gaps, so instead of on one or two pages there are blank pages in between.
