Ingredients:  

  • 2 large yellow onions
  • 2 sheets / 1 box puff pastry
  • 3 cups grated old cheddar cheese
  • 1 1/2 cups cubed brie (18 little cubes)
  • 1 1/2 cups caramelized onion
  • 18 whole pecans
  • 5 tbsp fresh rosemary, chopped
  • 36 frozen or fresh cranberries

Instructions: 

  • Slice the onions thinly.
  • Place a heavy-bottomed pot over low heat and add a small amount of oil and a few heavy pinches of salt.
  • Cook the onions slowly for 1 hour or more, stirring every 5–10 minutes, until the onions are deeply browned, soft, and sweet. Be patient so they will be caramelized and not fried and bitter. The slow cooking develops the sugar and sweetness
  • Add a small amount of butter at the end and cook for another minute. Set aside.
  • Preheat the oven to 375°F.
  • Unwrap the puff pastry and cut each sheet into nine 2 ½-inch squares (18 total squares).
  • Lightly grease two 12-cup muffin tins with cooking spray or shortening.
  • Press one pastry square into each muffin cup.
  • Add a cube of brie into each pastry-lined cup.
  • Add about 1 tablespoon of caramelized onions on top of the brie..
  • Sprinkle cheddar cheese over each one.
  • Add one pecan and 2–3 cranberries to each cup.
  • Finish with a sprinkle of fresh rosemary.
  • Transfer muffin tins to the oven.
  • Bake for 30 minutes, or until the corners of the puff pastry are very golden and puffed.

These look very yummy, but are “1 1/2 cups of caramelized onions” supposed to be in the ingredient list (onions are the first ingredient already)? I’ll try them!
