Caesar Dressing Recipe You’ll Want to Put on Everything
Alright, let’s talk about Caesar salad dressing. You know it, you love it—but once you make this homemade version? Game over. This Caesar dressing recipe is creamy, punchy, rich, and versatile. Whether you’re tossing it into a classic Caesar salad, spooning it into wraps, or using it as a sandwich spread, this one hits every note. I’ve made dozens of homemade Caesar dressings over the years—some with raw egg yolks, some with mayo, some with a questionable amount of garlic. But this one? This is the one I always come back to. It’s got body from grated parmesan, that signature briny zing from capers, a touch of sweetness from maple syrup (yep, that’s the move), and the kind of deep umami flavour that only anchovies (or a little anchovy paste) can bring to the party.
At A Glance
- Ready in under 10 minutes with pantry staples
- Creamy emulsion from egg, oil, and parmesan—no mayo required
- Bold umami flavor from anchovies (or capers if you prefer)
- Keeps for 5–7 days in the fridge
- Versatile beyond salad—use as a dip, spread, or drizzle
Recipe

Caesar Dressing Recipe
Ingredients:
- 2 or 3 cloves garlic
- 1 egg
- 1 tbsp Dijon mustard
- 2 1/2 tbsp maple syrup
- juice of 1 lemon
- 1 tbsp Worcestershire sauce
- 1 1/4 cups fresh shredded Parmesan
- 5 capers
- 1/4 cup apple cider vinegar
- 1 tbsp fresh cracked pepper
- 1/2 tsp salt
- 1 filet anchovy (optional)
- 1 1/4 cups vegetable oil
Instructions:
- Add all ingredients—except for the vegetable oil—into a blender.
- Start blending on medium speed until the mixture is fully combined and smooth.
- Slowly stream in the vegetable oil through the top of the blender while it’s running. This allows the dressing to emulsify and become creamy.
- Blend until smooth and creamy, then taste and adjust seasoning if needed.
- Transfer to a jar or airtight container and store in the fridge until ready to use.
Why This Homemade Caesar Dressing Recipe Works
The beauty of this Caesar salad dressing recipe is in the balance. You want richness from the egg, depth from the Worcestershire sauce, brightness from lemon, and sharpness from parmesan cheese. Add a little salt, black pepper, 3 cloves garlic and that umami kick from anchovies or capers, and you’re golden.
The anchovy fillet is optional—but I always say if you’re not sure, just go for it. It doesn’t make it fishy—it just deepens the flavour. Trust me.
What really makes this stand out is the combination of pantry staples with just a couple ingredients that give it that chef-y edge. And we’re blending it until smooth so the texture is dreamy—creamy but pourable.

What’s the Secret to a Creamy Caesar Dressing Recipe?
Great question—and here’s the answer: It’s the emulsion. Whether you’re using raw egg yolks, a whole egg, or even mayonnaise as your base, the goal is to slowly incorporate the vegetable oil (or extra-virgin olive oil, if that’s your preference) until everything binds into a thick, glossy dressing.
Pro tip: don’t forget to blend! Use a blender, food processor, or even an immersion blender to make this process foolproof. Just go slow with the oil, and you’ll end up with a smooth, creamy texture every time. As far as creamy dressings go, this one tops the list! It might just become your favorite salad dressings ever.

Tips & Tricks for Caesar Dressing Success
Garlic
We’re using 3 cloves of garlic here—big flavour. If you want to mellow it out a bit, you can roast the garlic beforehand, or just use a bit less. Either way, it brings that bold punch every good Caesar dressing recipe needs.
Anchovies or Capers
If anchovies aren’t your thing, you can sub in more capers or even a touch of anchovy paste. You’ll still get that briny depth without it being overpowering. Don’t skip this part—it’s what takes the dressing from “meh” to “wow.”
Lemon Juice + Vinegar
This combo brings bright acidity that cuts through the richness. I use fresh lemon juice and apple cider vinegar, but you could go with white wine vinegar if that’s what you’ve got.
Salt + Black Pepper
Because we’re using parmesan cheese and Worcestershire sauce, hold back a bit on the salt until you’ve tasted it. Then finish with a generous crack of black pepper—it’s a must for that signature Caesar taste.
Storage
This homemade Caesar dressing recipe keeps well in the fridge in a sealed jar or airtight container for about 5–7 days. Just give it a shake or stir before using. I don’t recommend freezing—it’ll split and lose its creamy vibe.

Substitutions & Swaps
- No raw egg? Sub in 1/4 cup of mayonnaise to keep it creamy without using raw egg yolks.
- Vegan? Swap the egg and cheese for vegan-friendly options and leave out the anchovy.
- Less garlic? Dial it back to 1–2 cloves or roast it to mellow the flavour.
- No blender? Use a whisk in a medium bowl and drizzle the oil in slowly—it takes a little muscle, but this method still gives you a smooth, creamy Caesar dressing recipe every time.
Want a different vibe? If you’re in the mood for something a little lighter—still creamy, still cheesy, but without the anchovy punch—give this Creamy Parmesan Dressing by Food.com a try.
How to Use This Caesar Salad Dressing (Beyond Salad)
This isn’t just for your next classic Caesar salad (though it’s amazing for that too, especially with some homemade croutons). Here’s how I like to use it:
- Spread on sandwiches or wraps – It’s unreal on grilled chicken wraps.
- Dip for roasted vegetables – Especially good with grilled zucchini or roasted potatoes.
- Burger topping – Trust me on this. Caesar burger. Do it.
- Drizzled on pizza – Yep. That little zing on a slice of ‘za? Fire.
- Dressing for pasta salad – Mix it with some cooked noodles, greens, and leftover grilled chicken for a quick lunch.
This Caesar dressing recipe is one of my favourite salad dressings, and once you make it, you’ll see why.

Make It a Whole Caesar Moment
If you’re going full Caesar salad mode, don’t forget:
- Crisp romaine – Fresh and crunchy.
- Homemade croutons – Toss cubes of bread with olive oil, salt, and garlic powder. Bake until golden.
- More shaved parmesan – Yes please.
- Optional: Add grilled chicken, crispy bacon, or soft-boiled eggs to make it a meal.
Frequently Asked Questions
What can I use instead of anchovies in Caesar dressing?
Capers work great for that briny punch without the fish. You can also use a small amount of miso paste or soy sauce for umami depth if you want to skip anchovies entirely.
How long does homemade Caesar dressing last?
Stored in an airtight container in the fridge, this Caesar dressing recipe keeps for 5–7 days. Give it a good shake or stir before using, as the oil may separate slightly.
Can I make Caesar dressing without raw eggs?
Absolutely. Substitute 1/4 cup of mayonnaise for the egg to get the same creamy texture without any raw egg concerns.

Final Thoughts On This Homemade Caesar Salad Dressing
Once you make this dressing from scratch, it’s hard to go back to the store-bought stuff. It’s rich, zippy, and guaranteed to level up your next Caesar salad—or whatever you slather it on. I’ve even got kids in my house dunking veggies into this like it’s ranch. Keep a jar in the fridge and watch it disappear.

This dressing is incredible. It’s my go to. I have lost track of how often I have made it. All my friends rave about it. I send them home with smaller jars 😊. To share as it makes a lot.
Best review ever, Susan! Thanks for that. Really happy that you and your crew love this so much.
So delicious!
Thank you
Thanks, Esther!
This is THE BEST Caesar dressing ever, and I’ve tried a number of different recipes. I’ve made it twice now, and each time it was thick and creamy and oh so tasty. Love that it isn’t mayonnaise based, uses one whole egg, no chopping or mincing involved so it’s quick to throw together, makes *lots*, can be used right away and is even better the next day.
These are the reasons I love it too, Anne! Thanks so much for taking the time to share!
I would like recipes in grams 🤗
Hi there, we will work on trying to add these measurements in the future. Thanks!
