  • 1 1/4 cups white sugar
  • 3/4 cup oil
  • 1/2 cup apple sauce
  • 2 eggs
  • 1 1/2 cups flour

  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups carrot shredded or finely grated
  • 1 cup walnuts or pecans roughly chopped

For the icing

  • 8 oz cream cheese room temperature
  • 1/2 cup butter room temperature
  • 1 cup icing sugar
  • 1/2 tsp cinnamon
  • 1 tbsp lemon juice
  • 2 tsp cornflour (cornstarch)

Instructions: 

  • Make the icing:
    Place the softened cream cheese and butter in a stand mixer. Whip on medium-high speed until airy, fluffy, and white—about 5 minutes.
  • Add the icing sugar ½ cup at a time, followed by the cinnamon, cornflour, and lemon juice.Whip for another 3–4 minutes.
  • Scrape into a piping bag (if you plan to pipe), or simply transfer to a bowl if you prefer to frost with a knife.
  • Prepare the loaf:
    Preheat the oven to 350°F (175°C).
    Grease a loaf pan with shortening or non-stick spray.
  • In a small bowl, combine the dry ingredients and mix well.
  • In a large bowl, cream together the sugar and oil. Add the apple sauce and eggs, whisking until well combined and airy.
  • Mix the dry ingredients into the wet until no dry clumps remain, then fold in the carrot and nuts.
  • Pour into the prepared loaf pan and bake for 1 hour 20 minutes, or until a toothpick inserted into the centre comes out with no batter, but only a few crumbs attached.
