Cheesy Chicken and Rice With Chorizo: 20 Minutes, Big Flavour

There’s just something magical about a big ol’ pan of cheesy chicken and rice. You know the kind — where the aroma hits you before you even walk into the kitchen, the spoon slides through perfectly tender rice, melty cheese strings out like a pizza commercial, and the whole thing feels like a cozy blanket for your soul. That’s the vibe we’re chasing today. This one-pot chicken and rice bake pulls inspiration from some of my favorite chicken and chorizo recipes — outrageously tasty, ridiculously easy to pull together, and bonus: it’s a cleanup hero.

Whether you’re cooking for the family, meal prepping for the week, or just craving something hearty without wrecking your kitchen in the process — this one’s a winner.

Recipe

Cheesy Chicken and Rice

Ingredients:  

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 1/4 cup chorizo sausage, diced
  • 2 chicken breasts, cubed
  • 1 398 ml can white beans (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 cup uncooked rice
  • 2 cups chicken or vegetable stock
  • 1 cup shredded mozzarella cheese
  • 1/4 cup green onion, sliced

Instructions: 

  • In a large skillet over medium high heat, add olive oil, onions, and minced garlic; sauté until fragrant.
  • Add in 1 cup chorizo and cubed chicken breasts; cook until chicken is lightly browned.
  • Stir in tomato paste, smoked paprika, garlic powder, onion powder, oregano, and salt; sauté to combine
  • Stir in rice, white beans (if using), then pour in chicken stock. Bring to a boil, cover, and simmer for 14–16 minutes.
  • While rice cooks, crisp remaining 1/4 cup chorizo in a separate pan.
  • Once rice is cooked, top with cheddar cheese, mozzarella, and crispy chorizo. Cover until cheese is melted.
  • Garnish with green onions.

Let’s call it what it is: comfort food with a purpose. This one pot chicken and rice isn’t just about cheesy goodness (although yeah, that’s a big part of it). It’s also packed with lean protein from chicken breasts, uses pantry-friendly ingredients, sneaks in some bonus veggies like broccoli or spinach if you want, and gets serious depth of flavor from smoky chorizo, spices, and rich broth.

Here’s why I’m obsessed:

  • One pot or technically, one large skillet from start to finish — less cleanup, more couch time.
  • High-protein thanks to skinless chicken breasts and optional beans. Feel free to swap in chicken thighs if that’s what you have available.

  • Easy to store in an airtight container for next-day leftovers.

Building Flavour: My Process for Cheesy Chicken and Rice Bake

The secret to any one-pot chicken and rice dish — especially ones inspired by chicken and chorizo recipes — more than just “meh” is building layers of flavor from the jump.

1. Prep with chopping the aromatics
We begin by chopping up a yellow onion and fresh minced garlic. These go into a large skillet with a splash of olive oil, sizzling away over medium high heat until softened and fragrant.

2. In goes the chorizo and chicken breasts
Add diced chorizo and cubed chicken breasts right into the skillet. As they cook, the fats from the chorizo infuse the chicken with smoky goodness — just like some of the best chicken and chorizo recipes out there. And yep — you absolutely can cook chicken and rice in the same pan — that’s the whole beauty here. Less mess, more flavour infusion.

3. Tomato paste + spice equals umami heaven
Now it’s time to stir in tomato paste, smoked paprika, garlic powder, onion powder and some oregano. These seasonings build serious depth. I love how these herbs mingle together with the chorizo oils, creating a base you can literally smell from down the hall.

4. The rice mixture comes together
After your spices have bloomed, it’s time for the rice mixture. Toss in your uncooked rice (rinsed, always rinse your white rice), stir through a can of drained white beans (totally optional), and pour in your chicken broth or chicken stock. Bring the cheesy chicken and rice recipe to a boil, cover, drop the heat, and let it gently simmer for about 15 minutes.

Toppings That Take It Over the Top

While the rice cooks, I like to crisp up a little extra chorizo in a separate pan. Once the rice is cooked through and fluffy, we go big: shredded mozzarella gets scattered across the top along with the crispy chorizo. Cover that pan for a few minutes to let the cheese melt into full-on gooey, stringy, cheesy glory. If you have some cheddar cheese lying around, feel free to shred some right into the pan.

Before serving this cheesy chicken and rice dish, I love to garnish with sliced green onions.

Tips and Tricks for Cheesy Chicken and Rice Bake Success

This isn’t a high-stress kind of meal, but a few small moves will take this one pot chicken and rice from good to outrageous:

Use a wide, large skillet.
The more surface area, the better the browning. This equals more flavor payoff down the road.

Rinse your rice.
Rinsing removes extra starch, so you get fluffy rice — not sticky or mushy rice.

Low and slow cheese melt.
Once the cheese goes on, turn off the heat, cover, and let the residual heat melt it gently. This avoids burning the bottom.

Taste your chorizo first.
Some are spicier than others. Adjust seasonings accordingly so your family isn’t surprised.

Cheese swaps welcome.
Mozzarella is my go-to, but a sprinkle of cheddar cheese or Parmesan is a delicious finishing touch for a nuttier bite.

Optional beans = extra protein and fiber.
If you want to bulk it out further, the white beans fit in perfectly.

Bonus veggies for extra color and nutrition.
You can easily stir in frozen peas, steamed green beans, or roasted asparagus right before serving. They add beautiful color, extra nutrients, and a bit of crunch that pairs perfectly with the creamy cheesy chicken and rice mixture.

Variations to Make it Your Own

One of the best parts about cheesy chicken and rice is how endlessly customizable it is:

  • Swap chorizo for bacon or smoky sausage.
  • Stir in extra broccoli, spinach, or any other veggies you have on hand.
  • Use dried herbs like thyme or Italian seasoning for added aroma.
  • Sub in vegetable broth if you want to go meat-light.
  • Finish with shredded Parmesan for extra richness.
  • Garnish with fresh parsley, or even a handful of sautéed spinach or steamed broccoli for bonus vegetables.

Storage and Leftovers

If you’ve got leftovers (which is honestly rare), let the dish cool completely and transfer it to an airtight container. Store in the fridge for up to 4 days. It reheats beautifully — like many great chicken and chorizo recipes, the flavors get even better the next day. For longer storage, freeze portions and reheat when you need a cozy dinner fast.
