Chicken Fajita Bowl

Ingredients:  

For the Fajita Mix

  • 2 chicken breasts, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 red onion, sliced
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp olive oil

For the Bowl

  • 2 cups cooked rice (cooled rice preferred, but warm rice works in a pinch)
  • 2 tbsp sriracha or hot sauce
  • 1/2 cup low-fat sour cream
  • 1/2 cup cilantro, chopped
  • 1/3 cup shredded mozzarella cheese

  • In a casserole dish, mix chicken, bell peppers, red onion, garlic, lime juice, and all the seasonings.
