This smashed chickpea salad sandwich recipe isn’t trying to be chicken salad, and it isn’t trying to be tuna salad either.

Most of the time, I actually don’t even turn this into a sandwich.

Chickpea Salad Sandwich
Ingredients:
- 1 540 ml can chickpeas, drained and rinsed, lightly smashed
- 1 stalk celery, thinly sliced
- 1/2 red onion, finely diced
- 1 ear corn, kernels sliced off the cob
- 1 tsp Dijon mustard
- 1/4 cup golden raisins
- 1 tsp maple syrup
- 1 cup sour cream or Greek yogurt
- 1 tsp curry powder
- 1 tsp salt
- sliced green onions, for garnish
- pita chips and bread for sandwiches for serving
Instructions:
- Drain and rinse the chickpeas thoroughly.
- Place them in a large bowl and lightly smash them using the back of a fork or a potato masher, leaving plenty of texture.
- Add the sliced celery, diced red onion, fresh corn kernels, Dijon mustard, golden raisins, maple syrup, sour cream (or Greek yogurt), curry powder, and salt.
- Stir everything together until well combined and creamy.
