The Ingredients That Make This Chopped Egg Salad Shine

This isn’t your average egg salad recipe. We’re building layers of flavor and texture that make every bite pop. Here’s what makes this one stand out:

  • Soft-boiled eggs – Cooking them just right (8 minutes) gives you that perfect jammy yolk that blends beautifully into the dressing.
  • Thick-cut bacon – Because when it comes to bacon, we go big. Crispy, salty, and oh-so-satisfying.
  • Green onions – Adds a fresh, mild onion bite without overpowering.
  • Iceberg lettuce – Classic crunch. You could swap for romaine, but we love the nostalgic texture here.
  • Cherry tomatoes – Bursts of sweetness that balance the richness.
  • Cottage cheese & light mayo – The secret to the creamy texture without going overboard on heavy mayo. You can even add a small dollop of Greek yogurt for a bigger protein boost.
  • Dijon mustard – A little zip that cuts through the creaminess and brings it all together.
  • Salt & pepper – Because seasoning is everything.

How to Serve Your Chopped Egg Salad

Alright, let’s talk serving options, because this is one of those chopped salad recipes that can go in so many directions.

  • On Sourdough – Toasted, grilled, or fresh, sourdough is the perfect sturdy base to soak up all that creamy, savory goodness.
  • Lettuce Cups – Want to keep it light? Wrap up your chopped egg salad in crisp iceberg or romaine leaves for a fresh, crunchy bite.
  • Crackers – Scoop it straight from the bowl onto your favorite crackers for a quick and easy snack.
  • Straight Up – Honestly, this one is so good, you might just grab a fork and dive in as-is. No shame in that game!

Make This Chopped Egg Salad Your Own

One of the best things about this bacon and egg salad is that it’s completely customizable. Want a little extra heat? Toss in some diced jalapeños or a pinch of red pepper flakes.

Prefer a tangier dressing? A splash of apple cider vinegar or a squeeze of lemon juice will do the trick. You could even sprinkle in some shredded cheese for extra richness. The possibilities are endless!

Meal Prep & Storage

This chopped egg salad is a meal-prep dream. Make a batch, store it in an airtight container, and you’ve got lunch sorted for the next few days. It keeps well in the fridge for up to 3 days, though if you’re anything like me, it probably won’t last that long.
