Can I substitute any flour for gluten-free flour?
This is a question I get all the time, and it’s not a straightforward answer. Flour is a really complex and important ingredient, it’s hard to replace.
Gluten itself is very important to developing texture and structure of all baked goods.
Gluten free flours obviously don’t have gluten, and can be very dense because of it. For me, adding the proper leavening agents to help bring some lightness to the recipe is really important.
When it comes to altering a recipe to be GF, just make sure you take into account all of the ingredients and how they interact with each other.
I hope that makes sense!

Good Quality Gluten-Free Flour?
There’s a ton of gluten free flours out there, all made from different ingredients.
For these gluten free bagels, I used Bob’s Red Mill All Purpose Baking Flour. I find this brand has the best flavour.
It’s made from chickpea flour, potato starch, tapioca flour and a few other milled beans.

How do I use an egg was?
Egg washes are super useful when it comes to getting beautiful golden crust on your baked goods.
The best way to get the most out of your egg wash is to whisk thre egg as mush as possible. The whites should be fully incorporated into the yolk.
A good baking brush is the best way to evenly coat and distribute your egg wash.
