I had one at a kid’s birthday party recently — the kind wrapped in plastic, slightly stale but still nostalgic — and it unlocked something. I hadn’t had one in years, and immediately I wanted to make a version that felt a little more grown-up but still kept that joyful, gooey core. That’s how this coconut rice krispie square recipe came to be. It’s familiar, easy, and unfussy — but with just enough elevation to feel intentional. Coconut Rice Krispie Squares

Prep Time 15 minutes

Ingredients:  

  • 5 cups Rice Krispie cereal
  • 1 1/2 cups shredded medium coconut, sweetened + 2 Tbsp for garnishing
  • 1/3 cup butter
  • 5 1/2 cups mini marshmallows
  • 1 tbsp coconut extract
  • 1 tbsp vanilla
  • 1 tsp sea salt + a few pinches
  • 1/2 cup dulce de leche + 2 Tbsp for garnishing

Instructions: 

  • Spray an 8×8 pan with cooking spray. For easy removal, line it with parchment paper, leaving a bit hanging over the sides, then lightly spray the parchment too.
  • In a large bowl, combine 5 cups Rice Krispie cereal and 1 1/2 cup shredded medium coconut (sweetened.
  • Stir to combine, then set aside.
  • Set a large pot over low heat and add 1/3 cup butter. Let it melt gently.
  • Once the butter is melted, stir in the coconut extract and the vanilla.
  • Add 5 ½ cups mini marshmallows to the pot. Stir constantly until completely melted and smooth.
  • Remove from heat (or keep on very low) and immediately pour the melted marshmallow mixture over the cereal/coconut in the bowl. Stir until everything is evenly coated.
  • Add 1/2 cup dulce de leche and stir just until swirled through (don’t fully mix—those ribbons are the goal).
  • Spoon the mixture into your prepared pan. Lightly grease your hands or a spatula (or use parchment) and gently press into an even layer—firm enough to hold together, but don’t pack it too hard.
  • Drizzle 2 Tbsp dulce de leche over the top. Sprinkle with 2 Tbsp shredded coconut (for garnish) and a few pinches of sea salt.
  • Let the squares cool at room temperature until fully set.
  • Lift out using the parchment overhang, slice into 9 large squares or 16 smaller pieces, and enjoy.
