Cold Sesame Noodles
Ingredients:
- 1 8oz Brown rice spaghetti Or any thin pasta
- 1 cup cherry tomatos, halved

- 1 tbsp toasted sesame seeds
Sesame Dressing
- 1/3 cup reduced sodium soy sauce
- 2 tbsp tahini
- 2 tbsp smooth almond butter peanut butter works too!
- 1 1/2 tbsp rice wine vinegar
- 1 lime, juiced
- 1 tbs toasted sesame oil
Instructions:
- Follow the package instructions and cook brown rice spaghetti. Once cooked, drain and run noodles under cold water. Toss with 1 tbs of sesame oil to avoid sticking and pour into large bowl.
- Toss in the cherry tomatoes, shredded carrots, snow peas, green onions, and sesame seeds.
- In a bowl mix together the soy sauce, tahini, almond butter, rice wine vin, lime juice, and sesame oil. Stir until smooth and then pour over noodles.
- Generously toss noodles to ensure they are totally coated. Store in the fridge until serving! Serve cold and enjoy!
