Ingredients:  

For the Beef Filling

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 white onion, diced
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/3 cup beef broth
  • 1/4 cup tomato sauce

For the Rice

  • 1 1/2 tbsp olive oil
  • 1 cup jasmine rice
  • 1 1/2 cups beef broth
  • 1/2 cup tomato sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 bay leaf

For the Chipotle Sauce

  • 1/2 cup light mayo
  • 1/2 cup sour cream
  • 2 chipotles in adobo + sauce
  • Zest of 1 lime
  • 1 tsp maple syrup
  • 2 tbsp fresh basil (optional)

For Assembly

  • 4 10-inch flour tortillas
  • 1 cup shredded marble cheese
  • 1/2 cup nacho cheese (homemade or store-bought)
  • 1/2 cup sour cream
  • 1 cup crushed nacho chips

Instructions: 

  • In a large pan over medium-high heat, add 1 tbsp of olive oil followed by onions and garlic. Sauté for 2 minutes
  • Add in the ground beef followed by paprika, cumin, oregano, salt, pepper, garlic powder, and onion powder.
  • Sauté until beef is nearly browned.
  • Stir in beef broth and tomato sauce.
  • Reduce heat and let the mixture simmer for 10 minutes.
  • In a separate pot over high heat, add 1½ tbsp olive oil and jasmine rice. Toast briefly.
  • Pour in beef broth, tomato sauce, garlic powder, onion powder, salt, and bay leaf.
  • Bring to a boil. Once boiling, reduce to low, cover, and cook for 12 minutes.
  • For the chipotle sauce: In a bowl, combine light mayo, sour cream, chipotles in adobo, lime zest, maple syrup, and basil (if using). Stir to combine.
  • Lay one 10-inch tortilla flat. Add a layer of rice, beef, nacho cheese, sour cream, and crushed nacho chips.
  • Fold into a burrito.
  • In a nonstick pan, add 1 tsp olive oil and ¼ of the shredded marble cheese. Let cheese begin to melt.
  • Place the folded burrito seam-side down onto the melting cheese.
  • Cook for 3 minutes or until golden brown.
  • Use a spatula to carefully flip the burrito and toast the other side.
