Ground Beef Salad

Ingredients:  

  • 1 tbsp olive oil
  • 500 grams lean ground beef
  • 1 garlic clove, grated
  • 1/2 tbsp oregano
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • freshly cracked black pepper, to taste

For the Salad

  • 1/2 cucumber, rough chopped
  • 2 small tomatoes, rough chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup lfresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • juice of ½ lemon
  • 1 tbsp olive oi
  • pinch of salt

For Serving

  • 1 container (450–500 g) store-bought hummus
  • 1/4 cup sliced pepperoncini
  • olive oil, for drizzling

Instructions: 

  • Heat a large frying pan over medium-high heat.
  • In a medium bowl, combine the lean ground beef, oregano, cumin, paprika, onion powder, cinnamon, salt, black pepper, and grated garlic.
  • Mix until the spices are evenly distributed through the beef.
  • Add olive oil to the heated pan.
  • Add the seasoned ground beef to the pan and break it apart with a spatula.
  • Let the beef sit for 4–5 minutes so it can brown.
  • Flip and continue cooking until the beef is fully cooked and browned, about 2 minutes more.While the beef cooks, make the salad.
  • In a medium bowl, vigorously whisk lemon juice, olive oil, and salt until slightly thickened.
  • Add cucumber, tomatoes, red onion, parsley, and mint to the dressing.
