Stuffed Sweet Potatoes with Ground Beef and Big Flavour
Alright, let’s talk about one of my go-to weeknight meals that hits all the right notes: stuffed sweet potatoes. These beauties are flavour-packed, protein-rich, and come together with minimal effort. Whether you’re looking for high-protein fuel, an easy dinner idea, or a smart way to meal prep, this ground beef stuffed sweet potato recipe is bringing the goods.
We’re talking roasted sweet potatoes that get all caramelized and soft, topped with spicy ground beef, creamy cottage cheese, tangy pickled red onions, avocado, a drizzle of honey, and a hit of Tajin for that salty-limey bite. Honestly, it’s a full meal on a roasted half-potato—and you can customize it in a bunch of different directions.
Recipe

Stuffed Sweet Potatoes
Ingredients:
- 1 lb ground beef
- 1 1/2 tsp salt
- 2 tsp garlic powder
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp pepper
- 2 medium sweet potatoes, cut in half
- Olive oil
- 1/2 cup cottage cheese
- 1 tbsp pickled red onions
- 1 tsp honey
- 1/2 avocado, sliced
- Tajin, to taste
Instructions:
- Preheat your oven to 450°F. Slice the sweet potatoes in half lengthwise, drizzle with olive oil, and place cut-side down on a baking sheet. Roast for 25 minutes or until fork-tender and golden. Remove from oven and let cool slightly.
- In a large skillet over medium heat, add your ground beef. Season with salt, garlic powder, smoked paprika, cumin, chili powder, and pepper. Cook, breaking it up with a spatula, until fully browned and cooked through. Remove from heat.
- Place roasted sweet potato halves on a plate or serving dish. Spoon over the seasoned ground beef. Add a scoop of cottage cheese to each, a few slices of avocado, a bit of pickled red onion, a small drizzle of honey, and sprinkle with Tajin.
- Enjoy warm, or store components separately in the fridge and assemble when ready to eat.
Why I Love This Stuffed Sweet Potato Recipe
First of all—sweet potato recipes are just so forgiving. You can dress them up a hundred different ways, they hold up well in the fridge, and they’ve got that natural sweetness that plays so well with bold, savoury flavours. These stuffed sweet potatoes are a little sweet, a little spicy, super satisfying, and totally spoon-worthy.
What makes this one special is the balance of flavours and textures. We’re layering depth here: savoury ground beef cooked in smoky spices, cooling cottage cheese, creamy avocado, zippy onions, and that squeeze of honey for contrast. Every forkful brings something exciting.

Stuffed Sweet Potatoes: Ingredient Breakdown
Let’s break down why these ingredients work so well together, and what swaps you can make based on what’s in your fridge to make these stuffed sweet potatoes perfect.
Sweet Potatoes
We roast them at 450°F until they’re tender and slightly caramelized. No need to wrap them in foil—just slice, oil, and roast straight on a baking sheet. The high heat concentrates their flavour and gives that sweet, earthy base we want.
Ground Beef
A quick sauté in a large skillet with salt, smoked paprika, cumin, chili powder, pepper, and garlic powder turns plain beef into something crave-worthy. It’s fast and adds protein and bold, meaty flavour. Don’t skip the spice blend—it’s the heart of this dish.
Cottage Cheese
This is where things get creamy and high-protein. Cottage cheese might surprise you in a taco-style dish, but it brings richness and balance to your stuffed sweet potatoes. If you’re not into it, a scoop of Greek yogurt or vegan sour cream would work here too.
Pickled Red Onions
The tangy crunch brings acid and contrast. I like having a jar in the fridge at all times. Don’t have any? A quick pickle with red onion, vinegar, and a bit of salt does the trick.
Avocado
Creamy, fatty, and super satisfying. Avocado is the perfect topping for anything with this much spice. It cools everything down and gives that buttery mouthfeel.
Honey
Just a touch—but it matters. It brings out the sweetness of the potato and balances the spice of the beef and onions. You could swap in maple syrup or even hot honey if that’s your vibe.
Tajin
This salty-citrus chili seasoning takes things next level. It’s the final garnish that ties these stuffed sweet potatoes together. You can also use chili-lime seasoning or a little smoked paprika with a squeeze of lime juice.

Tips for Making These Ground Beef Sweet Potatoes
- Roast, Don’t Steam: When it comes to stuffed sweet potatoes, get that dry heat going to concentrate the flavour. A soggy sweet potato is not what we’re going for.
- Customize Your Fillings: Want to bulk it up? Add corn salad, black beans, sautéed peppers, or a sprinkle of feta. Got leftover rotisserie chicken? Use it instead of ground beef.
- Great for Meal Prep: Roast a batch of baked sweet potatoes, store in an airtight container, and just reheat and top throughout the week.
- Low Waste Tip: Use the whole sweet potato—skin and all. Just give them a good scrub before roasting.
- Serving Size: One loaded half is usually good per person. Double up if you’ve got a big appetite or you’re skipping sides.

Serving Suggestions For These Stuffed Sweet Potatoes
This one’s a meal on its own, but you can round it out with a crisp salad on the side (I like something herby with dill, lettuce, and a light vinaigrette). Or just pile on more fresh veggies like tomatoes, corn, green onion and more cottage cheese.
You can prep all the stuffed sweet potatoes components ahead of time, keep them in the refrigerator, and let folks build their own. It’s also a hit for lunch or dinner—and I’ve even eaten them cold straight from the fridge (don’t judge).

Substitutions and Variations
- Ground beef: Swap with ground chicken, turkey, or crumbled tofu.
- Cottage cheese: Sub in Greek yogurt, sour cream, or even guacamole if you’re keeping it dairy-free.
- Tajin: Try smoked paprika + lime zest + a pinch of salt as a homemade alternative.
- Sweet Potatoes: If you’re out, try this method with baked russet potatoes or even roasted bell peppers for a twist on the classic stuffed sweet potatoes vibe.

Final Thoughts
This stuffed sweet potato recipe is all about layers—flavour, texture, and ease. Whether you’re making dinner, lunch prep, or something to fuel a busy week, these are going to hit every time. You’ve got protein, fiber, and a killer combo of savoury, sweet, and tangy all in one bite.
Tuck this one into your list of regular sweet potato recipes, and don’t be afraid to riff. That’s what makes cooking fun.

I’ve made this a several times. To me – this recipe sounded odd when I read it, but healthy. The of sweet potato, ground spiced meat., cottage cheese, avocado. Pickled onions etc. I find myself feeling so good the morning after I eat this gif dinner, and even more ofc – I crave this combination of ingredients about every 2 weeks. I’m not sure what it is – but I love it. Don’t skip the Tajin!!! Av little squeeze of lime brightens it. LUV LUV LUV
