High Protein Taco Bowl

Servings 6

Ingredients:  

For the Sweet Potatoes

  • 2 sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 1/2 tsp paprika
  • 1 tsp garlic powder

For the Beef & Veggies

  • 1 red pepper, sliced
  • 1/2 white onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/4 cup diced canned tomatoes
  • 1/4 cup beef or vegetable stock
  • 1/2 cup mozzarella cheese

Instructions: 

  • Preheat oven to 425F.
  • Peel and cube sweet potatoes. Toss with olive oil, salt, paprika, and garlic powder.
  • Spread out on a baking sheet and roast for 25 minutes or until golden and tender.
  • In a large pan, heat olive oil over medium-high heat.
  • Add red pepper and onion, cook for 3-4 minutes. Add black beans and stir.
  • Add ground beef and break it up as it browns.
  • Once cooked through, add seasonings, tomatoes, and stock. Let simmer for 5 minutes.
  • Stir in mozzarella until melted and creamy.
