This lemon ricotta garlic pasta is one of my favourite summer recipes. It looks impressive. It takes almost no effort. And honestly, that’s exactly how I want to cook when it’s warm outside.

Bright, creamy, fresh, super lemony, and ready in under 30 minutes, this is the kind of lemon pasta recipe that makes people think you worked way harder than you actually did. Which, if I’m being honest, is one of my favourite kitchen tricks.

It’s silky and glossy from starchy pasta water and parmesan cheese. It’s loaded with fresh lemon juice and lemon zest. And it’s finished with creamy ricotta and toasted walnuts for crunch. It feels fancy without actually being fancy.

Lemon Pasta with Ricotta in 25 Min Flat

Ingredients:  

  • 340 grams (12 oz) spaghetti
  • 3 tbsp olive oil
  • 1/2 shallot, minced
  • 3 cloves garlic, finely chopped
  • 1/2 tsp red chili flakes
  • 3 cups baby spinach
  • 1 lemon (juice + zest)
  • 1/2 cup reserved pasta water
  • 1/2 cup grated pecorino romano or parmesan
  • salt and pepper
  • 1 cup ricotta cheese
  • fresh parsley
  • 1/4 cup walnuts, toasted

Instructions: 

  • Bring a large pot of salted water to a boil and cook spaghetti until al dente.
  • Reserve ½ cup pasta water before draining.
  • Heat olive oil in a large skillet over medium heat.
  • Add shallot, garlic, and chili flakes and cook until fragrant.
  • Add spinach and cook until wilted.
  • Stir in lemon juice and a splash of pasta water.
  • Add cooked pasta and cheese.
  • Toss well, adding more pasta water as needed until glossy.
  • Season with salt and black pepper.
  • Plate the pasta and top with ricotta, lemon zest, toasted walnuts, parsley, extra cheese, and olive oil.

The sauce comes together with olive oil, garlic, lemon, pecorino or parmesan cheese, and pasta-cooking water. That’s it. No heavy cream, no complicated technique, no giant ingredient list.

Ingredient Tips That Make a Difference In This Lemon Pasta Dish

Reserve the Pasta Water

Boil the pasta to al dente in a large pot with some salt, but before draining, reserve a cup of the pasta water. This is what helps create the creamy lemon sauce without needing cream or butter.

Use Fresh Lemon Juice

Fresh lemon juice and lemon zest are what give this pasta its bright citrusy flavor. Bottled juice just won’t taste the same.

Toast the Walnuts

A few minutes in a dry skillet over medium heat completely changes the flavor of walnuts. They become nuttier, richer, and add incredible texture.
