I love this recipe. I made this Maple Pecan Pumpkin Oatmeal in partnership with Quaker Canada and I was so happy with the result. The perfect way to kick start a cold morning. Great flavours from the pumpkin, coconut milk, and spices. Picture if you blended a pumpkin pie into a bowl of oatmeal. That’s exactly what you get with the delicious bowl of comfort.

Ingredients you will need for this Maple Pecan Pumpkin Oatmeal

  1. Quaker quick Oats
  2. 14oz can of coconut milk
  3. Cinnamon, nutmeg, and maple syrup
  4. Pureed Pumpkin
  5. Toasted Pecans

There are so many directions you can take your bowl of oatmeal. You can follow this exact recipe using another pureed fruit or vegetable! Pureed apples, rhubarb. blueberries. The options are endless!

Recipe

Maple Pumpkin Oatmeal

Prep Time 5 minutes
Cook Time 5 minutes
Servings 2 bowls

Ingredients:  

  • 1 1/4 cup Quaker Quick Oats
  • 1 can Coconut Milk 14oz can
  • 2 tbs maple syrup
  • 1 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup Pureed Pumpkin
  • pinch salt
  • 1/4 cup chopped pecans

Instructions: 

  • Place a medium sized pot over medium high heat. Pour in the coconut milk, pureed pumpkin, cinnamon, nutmeg, and salt. Bring mixture to a simmer.
  • Once simmer has been reached add in the Quaker Oats and mix. Cover and allow to simmer for 3 minutes. Remove from heat and spoon into 2 bowls. Top each bowl with maple syrup, pecans, and extra spoon of coconut milk if you have extra.
