Ingredients:  

  • 2 cans tuna fish, drained
  • 1 tbs fresh lemon juice
  • 1 tbs apple cider vinegar
  • 1/4 cup red onions, diced
  • 1/4 cup dill pickles, diced
  • 1 green apple diced
  • 1 cob corn, kernels removed
  • 1/4 cup frozen peas
  • 1 cup jalapeno chips, crushed
  • 1/2 cup light mayo
  • 1 tbs wasabi paste

Instructions: 

  • In a bowl combine tuna, lemon juice, vinegar, red onion, dill pickles, apple, apple, corn, peas, and jalapeno chips.
  • In a small bowl mix together mayo and wasabi.
  • Toss salad and enjoy!

When he mentions Jalapeños he says jalapeño crisps, not chips and he means a product like “chili crisp” but made with jalapeño. It’s a specialty product, Don Chilio is the brand I’ve had.
