This slow cooked oven baked ribs recipe proves you don’t need fancy equipment to make juicy, incredibly flavorful ribs. With a low oven temperature, tightly wrapped aluminum foil, and a sticky honey chipotle glaze, these ribs come out tender every single time.
They’re right in that sweet spot—just before true fall-off-the-bone. The meat still has a little bite, but the bones pull away cleanly, giving you incredible tenderness and lots of flavor. Oven Baked Ribs Recipe
Ingredients:
For the Ribs
- 2 racks pork back ribs
- 3 tbsp mustard
- 2 tbsp brown sugar
- 2 tbsp Diamond Crystal kosher salt (or 2 tsp table salt)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
For the Honey Chipotle Glaze
- 1/3 cup honey
- 2 tbsp chipotle paste (chipotle in adobo, can blended
- 2 tbsp ketchup
- 1 tbsp butter
- 1 tbsp white vinegar
- 1 tsp Worcestershire sauce
- zest of 1 lime
- juice of 1 lime
For Serving (Optional)
- lime wedges
- sliced green onions
- chopped cilantro
Instructions:
- Preheat the oven to 275°F (135°C).
- Remove the membrane (silverskin) from the back of the ribs. Slide a knife under one corner, grab it with a paper towel for extra grip, and pull it away in one piece.
- Pat the ribs dry if needed. Spread the mustard over both sides of each rack to help the seasoning adhere.
- In a small bowl, combine the brown sugar, kosher salt, smoked paprika, garlic powder, onion powder, and black pepper. Mix well.
- Generously season both sides of the ribs, making sure to coat the tops, bottoms, and sides evenly.
- Lay each rack on a large sheet of heavy-duty aluminum foil.
- Wrap each rack tightly, sealing the foil well to trap in moisture. If your racks are very large, cut them into smaller sections before wrapping.
- Place the wrapped ribs on a large baking sheet and bake for 3 hours, or until the ribs are very tender and bend easily when lifted with tongs.
- While the ribs bake, prepare the honey chipotle glaze. In a small bowl, whisk together the honey, blended chipotle paste, ketchup, melted butter, white vinegar, Worcestershire sauce, lime zest, and lime juice until smooth.
- Remove the ribs from the oven and carefully unwrap them, watching for hot steam.
- Increase the oven temperature to 450°F.
- Transfer the ribs back onto the baking sheet. Brush the honey chipotle glaze generously over every surface of the ribs, including the tops, bottoms, and sides.
- Return the ribs to the oven and bake uncovered for 15 minutes, or until the glaze is glossy, bubbling, lightly caramelized, and sticky.
- For even more caramelization, place the ribs under the broiler for 1–2 minutes, watching carefully to prevent burning.
- Transfer the ribs to a cutting board and let them rest for 5 minutes before slicing between the bones.
- Serve with fresh lime wedges, sliced green onions, chopped cilantro, and your favourite BBQ sides.

If you’re working with full racks, don’t hesitate to cut them into smaller sections first. They’re easier to wrap and fit nicely on a baking sheet.
3. Finish Hot
Low and slow builds tenderness.
High heat builds flavour.
Once the ribs are cooked, unwrap them, brush every surface—including the top of the ribs and the sides of the ribs—with your glaze, then return them to a hot oven.

Can you do these in a grill? I try not to use my oven in the summer months – especially for hours at a time! I’m just wondering if this cooking method would work as well in an outdoor grill…

Absolutely! Set your grill up around 275°F and cook the foil-wrapped ribs for about 3 hours, just as you would in the oven.
