Corn Dip (Backyard BBQ Favorite in 15 Minutes)
There are certain recipes that instantly disappear the second they hit the table, and this Mexican street corn dip is absolutely one of them.
It’s creamy, smoky, a little spicy, loaded with charred fresh corn, and somehow manages to feel both rich and fresh at the same time. This is the kind of thing I make once during corn season… and then suddenly I’m making it every weekend until August disappears.
This Mexican street corn dip situation is everything I want at a backyard BBQ: minimal effort, huge flavor, and a bowl that people aggressively hover around with tortilla chips.
And honestly? I don’t blame them.

Why This Corn Dip Works
This isn’t just mayo and corn tossed into a bowl and called a day.
The reason this Mexican street corn dip recipe works so well is because every ingredient actually has a job to do.
The charred corn brings sweetness and smokiness. The lime juice cuts through the richness. Jalapeños add heat, green onion keeps things fresh, and feta brings salty creaminess that balances everything out.
Then you hit it with smoked paprika, cumin, hot sauce, and garlic… and suddenly you’ve got a dip that tastes way bigger than the ingredient list suggests.
That’s the magic of good summer food.

Char The Corn Properly
This matters.
The flavor of this street corn dip comes from getting real color on those corn kernels. You want blistered spots and a little char — not steamed corn.
You can do this:
- On the BBQ
- In a large skillet over medium heat
- Directly over a gas flame
- Or even under the oven broiler
The point is: color = flavor.
Once the corn cobs cool slightly, slice the kernels off and try not to eat half of them standing at the cutting board.

Let’s Talk Corn Dip Texture
Good corn dip needs texture.
You’ve got:
- Juicy corn kernels
- Crunch from red pepper and onion
- Creaminess from mayo and sour cream
- Salty crumbles of feta
- Heat from jalapeños
Every bite hits differently, which is why people keep going back for “just one more scoop.”

The Sauce Situation In This Corn Dip Recipe
The sauce is intentionally simple in this corn dip recipe.
Mayonnaise and sour cream (or Greek yogurt if you want) create the creamy base, while lime juice, smoked paprika, cumin, garlic, and hot sauce wake everything up.
It’s rich without feeling heavy.
If you want a cheesier vibe, cream cheese works beautifully as an add-in. Pepper jack or gouda would also be unreal melted into a warm version of this dip.

Easy Corn Dip Variations
This corn dip recipe is incredibly flexible.
Want it spicier?
Add extra jalapeños or chili powder.
Want it smokier?
Use charred green chiles or smoked gouda.
Want it extra creamy?
A spoonful of cream cheese works great.
You can even stir in cheddar or cotija cheese depending on the flavor profile you want.
That’s the beauty of dips like this — they adapt easily.

What To Serve With Corn Dip
This is absolutely a “bring plenty of tortilla chips” situation.
But it’s also incredible with:
- Fritos
- Crackers
- Fresh veggies
- Grilled chicken
- Tacos
- Burgers
- BBQ pork
Honestly, I’ve even eaten leftovers with a spoon straight from the refrigerator. No shame.
Storage & Make Ahead Tips
This corn dip holds up really well.
Store it in an airtight container in the refrigerator for up to 3 days. In fact, the flavors get even better after sitting for a bit.
Just give it a quick stir before serving again.

FAQs
Can I use frozen or canned corn?
Yes — but fresh corn is definitely the move if it’s in season. Frozen works best if fresh isn’t available.
How spicy is this street corn dip?
Mild to medium. Removing the seeds from the jalapeños keeps it balanced.
Can I make it ahead?
Absolutely. It actually tastes better after chilling for a couple hours.
Can I serve this warm?
Yep. A warm baked version with cheddar or pepper jack is fantastic.
What’s the best chip for this dip?
Thick tortilla chips or Fritos hold up best.

Final Thoughts
This corn dip recipe is exactly what summer food should be: easy, vibrant, packed with flavor, and designed to be shared outside with good people.
It’s creamy, smoky, salty, fresh, and honestly kind of addictive. Whether you’re bringing it to a BBQ, scooping it onto tacos, or hovering over the bowl with chips while pretending you’re “just tasting,” this one always delivers.
Make it once during corn season and I promise it’ll become part of the regular rotation.

Unbelievably good. My 8 year old grandson’s new favourite to heat with tortilla chips. Great on rice crackers, keeps well for a few days! You can dial up the spiciness as desired.
