I LOVE tomato season. Give me a big basket of plump, juicy fresh tomatoes and I can think of about a hundred things I want to make, but this homemade tomato basil soup recipe is always near the top of the list.

Tomatoes also bring back some pretty special memories for me. When I was little, my family would head to U-Pick farms and pick enough tomatoes to get us through the winter. And I mean A LOT of tomatoes. We’d bring them home, parboil them, freeze them, and pull them out all winter long for soups, stews and sauces. To this day, I still don’t think there’s anything quite like farm-fresh summer veggies.

That’s really the inspiration behind this homemade tomato basil soup.

Instead of cooking everything on the stove from the beginning, I roast the tomatoes, shallots and garlic in the oven with olive oil, salt and black pepper. The edges caramelize, the tomatoes release all those gorgeous juices, and the flavors become richer and sweeter without me having to do much of anything.

Then everything gets blended with broth and fresh basil before simmering with a Parmesan rind for even more savory flavor.

It’s simple, hearty and so good with a grilled cheese sandwich on the side.

Tomato Basil Soup

Prep Time 15 minutes
Cook Time 1 hour

Ingredients:  

  • 3 lbs ripe tomatoes, halved
  • 2 shallots, peeled and quartered
  • 6 cloves garlic, peeled and halved
  • 1/4 cup olive oil
  • 1 tsp sea salt
  • 1/2 tsp fresh ground pepper
  • 1/4 tsp chili flakes, optional
  • 3 cups vegetable or chicken broth
  • 3 tbsp fresh basil, torn plus more for garnish
  • 1 parmesan rind

Instructions: 

  • Preheat the oven to 400°F (200°C).
  • Arrange the halved tomatoes, shallots, and garlic on a large baking sheet. Tuck the garlic cloves under the tomatoes so they don't burn.
  • Drizzle everything with olive oil and season evenly with sea salt, black pepper, and chili flakes, if using.
  • Roast for 40–45 minutes, until the tomatoes are soft, juicy, and caramelized around the edges and the shallots and garlic are tender.
  • Carefully transfer the roasted tomatoes, shallots, garlic, and all of the juices from the baking sheet to a blender.
  • Add the broth and fresh basil.
  • Blend until completely smooth, working in batches if needed.
  • Pour the blended soup into a large pot and add the Parmesan rind.
  • Bring to a gentle simmer and cook for 15–20 minutes, stirring occasionally, to allow the flavors to come together.
  • Remove and discard the Parmesan rind.
  • Taste and adjust the seasoning with additional salt and black pepper if needed.
  • Ladle into bowls and serve warm with fresh basil on top and with a crispy grilled cheese sandwich for dipping.

Why I Roast the Tomatoes First

Could you make tomato soup entirely in a pot? Absolutely.

But roasting is my favorite way to do it.

Fresh tomatoes contain a lot of juice, and roasting concentrates all of that tomato flavor while caramelizing the edges. The shallots become sweet and soft, the garlic mellows, and the whole tray smells incredible.

It’s also incredibly easy. I spread everything out, drizzle it with olive oil, put it in the oven, and let the heat do the work.

No standing over a pan constantly trying to stir something.

And make sure you save every drop of liquid on that sheet pan! Those roasted tomato juices are packed with flavor and belong in the soup.

Notes for Really Good Tomato Basil Soup Recipe

Start with Ripe Tomatoes

This is one homemade tomato basil soup where the quality of the main ingredient really matters.

I make this soup when tomatoes are heavy, ripe and juicy. Roma tomatoes are wonderful because they’re meaty and have less water, but beautifully ripe garden tomatoes or whatever looks great at the market will work too.

Don’t Crowd the Pan

Give the tomatoes enough room to roast instead of steam. If you’re making a larger amount, divide them between two pans or roast them in batches.

Keep Those Roasting Juices

I can’t say this enough. When you transfer the roasted tomatoes into your blender, scrape in every last bit of juice and olive oil from the pan. That’s flavor!

Don’t Skip the Parmesan Rind

I always save my Parmesan cheese rinds in the freezer specifically for recipes like this. As the soup gently simmers, the rind adds this incredible salty, savory depth without making the soup heavy.

Why This Tomato Basil Soup Recipe Doesn’t Need Heavy Cream

A lot of tomato basil soup recipes rely on heavy cream for richness.

This one doesn’t need it.

Once the roasted tomatoes, shallots, garlic, broth and basil are blended together, the soup becomes beautifully smooth and velvety all on its own. The olive oil gives it body, and that Parmesan rind adds another layer of richness as everything simmers.

I love that you still get a creamy-feeling soup without covering up the fresh tomato flavor.

Of course, if you’re someone who loves cream in your tomato soup, you could add a splash to your own bowl. But I always try it first without.

Fresh Basil Goes in After Roasting

There’s a reason I don’t roast the fresh basil with the tomatoes.

Basil is delicate, and prolonged high heat can take away some of its fresh, sweet flavor. I add it when I’m ready to blend the soup so it stays bright and fragrant.

That combination of roasted tomato and fresh basil is exactly what I want in a tomato basil soup—deep, savory flavor balanced by something fresh.

Vegetable Broth or Chicken Broth For This Tomato Basil Soup Recipe?

Either works beautifully.

I use vegetable broth or vegetable stock when I want to keep the soup vegetarian. Chicken broth or chicken stock adds a slightly richer savory flavor.

Use whichever you already have in the pantry.

Tomato Basil Soup Recipe: Regular Blender or Immersion Blender?

I prefer a regular blender because it gives this soup a really silky consistency.

Just remember that you’re blending something hot. Depending on your blender, you may need to let the vegetables cool slightly and work in batches. Never overfill a blender with hot liquid.

An immersion blender works too if you’d rather transfer everything directly into a large pot. The finished texture may be a little more rustic, which honestly isn’t a bad thing.

Either way, blend until you reach the consistency you love.

No cream needed here—just blend until beautifully smooth!

Soup Season Starts with Tomato Season

I think we sometimes associate soup with cold weather, but this is one of my favorite soup recipes to make at the end of summer.

It’s that funny time of year when the days are still warm but evenings are starting to cool down, and the gardens are overflowing with tomatoes.

That’s exactly when I want this.

It lets those beautiful summer veggies do all the talking, but still gives you that cozy bowl-of-soup feeling.

And if you make a big batch now and freeze some? Even better. Pulling homemade tomato soup from the freezer in the middle of winter feels like finding a little bit of summer you forgot you saved.

We also obviously need to talk about grilled cheese.

Yes, you can absolutely eat this soup on its own. But if I have good bread and cheese in the house, I’m making the sandwich too.

Make a Big Batch Of This Tomato Basil Soup Recipe for Later

This homemade tomato basil soup is a great one to make ahead.

Let the soup cool completely before transferring it to an airtight container and storing it in the refrigerator. When you’re ready to eat it, warm it gently in a pot over medium heat, stirring occasionally.

It also freezes really well because there’s no cream in the base.

I love freezing individual portions for quick lunches. Add a grilled cheese sandwich and suddenly that random Tuesday lunch feels pretty great.

Can I use Roma tomatoes?

Absolutely. Roma tomatoes are a great choice because they’re flavorful and meaty. You can also use any ripe fresh tomatoes that look great at the market or in your garden.

Do I need tomato paste?

No. Some tomato soup recipes use tomato paste to intensify the tomato flavor, but roasting fresh tomatoes does that job beautifully here.

Can I add carrots or onions?

You’ll see carrot and onion in plenty of tomato soup recipes, but my version uses shallots instead. They become wonderfully sweet when roasted and complement the tomatoes without overpowering them.

Can I freeze tomato basil soup?

Yes. Cool it completely and store it in a freezer-safe container. Because this recipe doesn’t contain heavy cream, it freezes and reheats especially well.

For me, this soup will always be about more than throwing tomatoes into the oven.

It reminds me of those trips to the U-Pick farm, coming home with more tomatoes than any reasonable family could possibly need, and knowing we’d somehow use every last one.

Food memories are funny like that.
