It’s bright, juicy, fresh, a little spicy, a little sweet, and ridiculously easy to throw together. We’re talking ripe fresh peaches, tomatoes, lime juice, herbs, jalapeños, and just enough salt to make everything pop. Scoop it up with tortilla chips, spoon it over grilled chicken or pork, pile it onto fish tacos — this thing works with basically everything.

And the best part? No cooking. No oven. Just chopping, stirring, and trying not to eat the whole bowl before dinner.

Peach Salsa

Servings 6

Ingredients:  

  • 9 peaches, diced
  • 5 medium tomatoes, diced
  • 1 large jalapeño, seeded and finely diced
  • 1/4 cup red onion
  • 1 clove garlic, minced
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped basil
  • 1/4 cup chopped mint
  • juice and zest of 2 limes
  • 1/2 tsp salt, or to taste
  • 1 tsp tajin (optional)
  • 1/4 tsp freshly ground black pepper, or to taste

Instructions: 

  • Dice the peaches and tomatoes and add them to a large bowl.
  • Add diced jalapeño, red onion, garlic, cilantro, basil, and mint.
  • Pour over lime juice and add lime zest.Season with salt, black pepper, and tajin if using.
  • Gently stir everything together until combined.
  • Taste and adjust seasoning as needed.
  • Chill in the fridge for 15–20 minutes before serving if desired.
  • Serve with tortilla chips, grilled chicken, pork, or fish tacos.
