I always want something sweet after a workout, and these Protein Oatmeal Cookies scratch that itch! Coming in with 10g of protein per cookie, you might have just found your new favourite sweet treat!

Baking with protein powder.

Baking with protein powder is a great way to incorporate a bit of extra protein in a way that isn’t just mixing it in a tumbler and pretending it tastes good.

It has a similar consistency to flour, just a bit denser.

It binds to fats and liquids just as well as flour. Oftentimes, protein powder-based desserts or recipes are very dry and dense. These cookies are perfectly balanced so you get a good amount of chew and lightness.

Protein Oatmeal Cookies – Tips on baking.

When baking any cookies, it’s best to make sure there is enough space in between each ball to ensure they don’t form into one massive cookie.

This recipe will yield about 12 cookies. I personally like mine a bit bigger, so I divide the last portion up amongst the others, giving me 11 slightly larger cookies.

Just remember, if you make them too big, however, you run the risk of under-baking your cookies.

You’ll want to bake them for 10-12 minutes; they might look slightly underbaked, but they’ll continue baking as they rest on the sheet tray.

Protein Oatmeal Cookies – Tips on freezing.

This dough is dense enough that it will freeze, thaw, and bake wonderfully. 

If you wanted to make a double or even triple batch, portion off your balls, properly store and freeze them, you’d have a handsome supply of ready-to-bake cookies.

Make sure to pull them ahead of time and let them thaw before baking!

Ingredients:  

  • 2 cups Oats
  • 1 cup Vanilla Protein Powder
  • 1 tsp Baking Powder
  • 1/4 tsp Kosher Salt
  • 1/4 cup Stevia or 1/2 cup Sugar
  • 1/2 cup Melted butter + 2 tbsp Melted Butter
  • 2 Eggs
  • 1 tsp Vanilla
  • 1/2 cup Chocolate Chips

Instructions: 

  • Preheat oven to 350°F.
  • Into a large mixing bowl, combine 2 cups oats, 1 cup protein powder, 1 tsp baking powder, ¼ tsp salt, and ¼ cup stevia (or ½ cup sugar). Mix well.
  • Next, add in ½ cup + 2 tbsp of melted butter, 2 eggs, 1 tsp vanilla, and ½ cup of chocolate chips. Mix the dough well.
  • Roll into 11-12 equal-sized balls, wet your hands, and press flat on a parchment-lined baking sheet. Bake for 10-12 minutes.
